Recipe Weekend/CLOSED/Giveaway: Funky Enchiladas and Other Mexican Dishes Kids Cookbook

Capstone Press recently sent me some wonderful Kids Cookbooks to try out and I couldn't wait to try some of the recipes from Funky Chicken Enchiladas and Other Mexican Dishes!

The book is aimed and Grades 1-3 and includes everything from cheesy quesadillas to the enchiladas to guacamole to wedding cookies! I like how in the beginning of the books they show illustrations of the cooking items needed for cooking with the book. It gives kids a better idea of what is needed to cook with!


Each recipe has a list on ingredients AND a list of tools needed for it. THEN each step is ILLUSTRATED (isn't that a great idea-don't you wish ALL cookbooks were like that?). Most of the recipes were very simple and pretty much the ones we normally use!

As it is the holiday season and we always make these Mexican Wedding Cookies, I thought I'd include the recipe for it, from the book,  for Recipe Weekend!

Mexican Wedding Cookies

Ingredients:
1 stick unsalted butter, softened
1/2 cp confectioners sugar
1/2 cp cornstarch
1/4 tsp pure vanilla extract
3/4 cp all-purpose flour
1/2 cp chopped pecans (or cashews-our favorites)

Tools Needed:
Rimmed baking sheet                     cooling rack
Parchment Paper                           medium sized mixing bowl
Wooden spoon                              measuring cups
Measuring spoons                          oven mitts
Small bowl                                    platter
Spatula

1. Preheat oven to 350 degrees
2. Line cookie sheet with sheet of parchment paper
3. In medium bowl, mix together butter with 1/4 cp of the sugar til smooth.
4. Add cornstarch, vanilla, flour and nuts to butter mixture. Stir til soft dough forms.
5. Form the dough into 12-14 balls (depends on how small you make them). Transfer to the baking sheet.
6. bake for about 20 minutes, until lightly golden brown. Remove to cooling rack
7. Pour remaining sugar into the small bowl.
8. While cookies are STILL warm, roll them in the sugar. Place back on rack to cool.
9. Place on platter and serve-good luck if they make it to the table! Ours NEVER do-as you can see form the pix, only 10 out of 13 made it to the bowl out of the first batch!
