Cookbook Review and Giveaway: Potluck Survival Guide by Cherie Kimmons.

Today we have an interesting cookbook to review! This book is aimed at potlucks, especially those for young athletes! The basic recipes serve under 8, but an included serving guide helps you decide whether you need to triple or twice-triple (sixple?) a recipe to meet your needs!

About the Author: Cherie comes from a rich culinary tradition that blends Italian and Cajun French cooking. During the years she spent working as an award-winning reporter and columnist for Knoxville's Press Enterprise, a web writer for HGTV, and a freelance writer, Cherie spent long hours in the cooking trenches using the skills she inherited from her family. She chaired school committees, created menus, and cooked countless meals for her kids' sports teams.


Cherie tweaked the recipes she collected over time, adding flavors here and removing calories there. Years as a corporate wellness and fitness instructor guided chapters on menu planning and nutrition for athletes, while her training as a clinical psychologist helped her understand the anguish some people feel when required to produce meals for people they don't know. One of Cherie's ambitions is to instill in her readers the same joyful approach to preparing and sharing food she learned from her family. 



Review: Probably due to the author's Cajun/Italian background, many (ok, MOST) of the recipes in this book were pretty much our family's recipes! Account for some spice tweaking here or there and you have our family cookbook! The dishes are ones we've taken to potlucks and family dinners for years and are definitely well loved by all!


I loved her 3 page guide that helped you know how much food is needed for single, 12 and 25 servings. I never had a guide to break it down as simple as 5-7 oz of shrimp is a single serving, where as 3-4 pounds serves 12 and 7 pounds serves 25! Having this chart is a great guide, when you're not sure how much to make!


If you need a great cookbook for simple and basic recipes for potlucks, this is THE book for you!


Here's a great Summer heat remedy recipe!


Ice Cram Sandwich Cake


Ingredients:
1 box of ice cream sandwiches
1 jar caramel ice cream sauce
1 sm container whipped topping
1 bag of crushed candy bat like Heath or Skor


Instructions:
1. Fill a large casserole pan with a layer of half the unwrapped ice cream sandwiches.
2. Drizzle layer with caramel sauce and stack on remaining unwraped sandwiches.
3. Cover the surface with whipped topping and sprinkle with a generous amount of the crushed candy bar.
4. Place back in freezer, until time to eat, as sandwiches will melt quickly!


Alternative: cover with candy sprinkles, or with chocolate curls, or small chocolate chips, instead of candy bar. Or you can drizzle with chocolate sauce instead of the candybar.
