German chocolate cake has always been a favorite in our family. That is why it was such a big event when my aunt came up with the recipe below for decadent German Chocolate Cake Cookies. They are a breeze to make and much easier to transport than a traditional German Chocolate Cake. They are now a main staple at all family events! Hope your family enjoys them as much as we do!

German Chocolate Cake Cookies
Ingredients
- 1 cup of butter, softened
- ¾ cup brown sugar
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 large egg
- ¼ cup vegetable oil
- 2 ½ cups all-purpose flour
- ¾ and 1 cup chocolate chips
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup shredded sweetened baker’s coconut
- ¾ cups toasted and chopped pecans (optional)
- Preheat the oven to 375 degrees. Use a silicone liner or line your baking sheets with parchment paper.
- Using a mixer, beat the butter and both sugars until smooth. Add the vanilla, egg and oil and beat until mixture is combined. In the microwave, heat 3/4 cup of the chocolate chips on medium heat, stirring every 30 seconds. When the chocolate chips are just barely melted, add to the butter mixture and blend thoroughly.
- In another bowl, stir together flour, baking soda and salt. Add to the butter mixture and blend until well combined. Stir in remaining cup of chocolate chips, shredded coconut and pecans (if desired).
- Using two spoons, scoop large walnut-size balls of cookie dough onto your prepared baking sheets. Cook 12 minutes or until the edges of the cookies turn just a bit darker. Take out of the oven and let cool completely on the baking sheet. Do not overcook or you will lose the delicious, chewy quality!
