Cookbook Review: Cupcakes & Cocktails by Bonnie Marcus

I probably should have put this for Friday's Recipe Weekend post, but I figured if we're talking teen age years today, this would probably be a really great theme book! Cause you Moms KNOW you're gonna need at least one drink during those turbulent years! Enjoy!

Review

Summer is coming to an end, but there are plenty of recipes for 'adult' cupcakes and drinks, n this book to get you thru the last days, and many are perfect for that Labor Day BBQ! They're also gonna be VERY helpful when school starts, LOL! Besides te wonderful drink and cupcakes, this book also has recipes for macaroons (French style), muffins, meringues, truffles and even mini pies! There are drinks and cupcakes for every day, special occasions and even holidays! Some of my favorites are the Strawberry Mimosa Cupcakes, the White Diamond Frappe, Malibu Bay cupcakes and Valentine Day Berry Pies.

The recipes in the book are all super easy and with the a picture for EACH recipe (score!), even a beginner baker/drinkologist can achieve great results! The book is a perfect little guide and it would be lovely packaged with cooking ingredients and drink glasses for a housewarming, hostess, birthday, Christmas or even Mother's Day gift! It's a gift that will keep on giving!

Here's a recipe from the book that just screams SUMMER so much that even Olaf would throw on a sombrero and eat 3 or 4!



margarita cupcakes


Margarita Cupcakes:

Ingredients/ Cupcakes:
1.5 cups all-purpose flour
1.5 teaspoons baking powder
1⁄4 teaspoon salt
1⁄2 cup/1 stick unsalted butter, softened
1 cup superfine sugar
2 teaspoons vanilla extract
2 large eggs
1⁄3 cup milk
3 tablespoons tequila juice and zest of 1 lime

Ingredients/ Frosting:
3 large egg whites
3⁄4 cup sugar
1 cup (2 sticks) unsalted butter, softened
1⁄4 cup triple sec
zest of 1 lime
green food coloring


Directions/ Cupcakes:
1. Preheat the oven to 350°F and line a 12-hole cupcake pan with paper cupcake liners.
2. Sift together flour, baking powder, and salt into a bowl.
3. Put the butter and superfine sugar into a separate bowl and beat until pale and fluffy.
4. Add the vanilla extract and the eggs, one at a time, beating after each addition, to the butter mix.
5. Add half of the flour mixture and the milk, tequila, and lime zest and juice, to the butter mix, and beat until combined.
6. Add the remaining flour mixture and mix.
7. Spoon the batter into the paper liners and bake in the preheated oven for 20 minutes, until a toothpick pushed into the center of a cupcake comes out clean.
8. Let cupcakes cool in the pan for 1–2 minutes, then transfer to a cooling rack to cool completely.

Directions/ Frosting
1. Put the egg whites and sugar in the top of a double boiler (or use a heatproof bowl set over a saucepan of gently simmering water) and whisk over simmering water until the sugar has completely dissolved.
2. Remove from the heat and whisk the mixture for 4–5 minutes.
3. Add the butter, 2 tablespoons at a time, and continue to whisk until the mixture holds stiff peaks.
4. Add the triple sec, lime zest and 2 drops of food coloring and stir until just combined.
5. Spoon the frosting into a pastry bag fitted with a star- shaped tip and pipe it onto the cupcakes.

6. ENJOY!!!!!!!!!!!!!
