Recipe Weekend: St. Patrick's Day Roll Ups

Ah St Patrick's Day is upon us...

Are you tired of rainbow cookies, electric green cupcakes and shamrock cookie recipes yet? 

Yup, I'm with you!

Which is why when it came time for Miss Grace's Krewe of Erin Princess Tea, I decided to make tea sandwiches, instead of bring one more trays of sweets, that I knew would be weighing the tables down!

But not any sandwiches:

Spinach Wrap Pinwheels!

Everybody seems to love these things- a friend has been making them for her on the side catering business for years,and was nice enough to share her famous recipe with me. And then I used a recipe we use for a Crescent wrap and altered it for these pinwheels.

Ham and Cheese Pinwheels:

The close up above was one of the left overs (I was so busy I forgot to take more than 1 picture!), but it gives you an idea of everything that is in there!

Ingredients:

1 package of Spinach wraps
1 1/2 box of cream cheese, softened
1/2 cup mayonnaise
1 pack of Hidden Valley dry Ranch mix
2 tbsp dill pickle relish (you can add more depending on your family's tastes)
Sliced ham- sliced in strips
Sliced cheese (sliced in strips)  or 1 bag of shredded cheese  (I used both)
Bacon bits  (note I used the real type ones, bot the hard crunchy ones)
Pepper
Salt

Directions:

1. Take softened cream cheese, mayo, and dill pickle relish and mix well. Add ranch dressing mix, mix well. Taste and add pepper and salt to taste.
2. Lay out one wrap and cover with cream cheese mix.
2. Layer bacon bits, shredded cheese, sliced ham and sliced cheese on top of cream cheese mix.
4. Starting on one side, carefully roll up wrap until all of wrap is rolled. 
5. Starting in middle, cut wrap vertically, making about 3/4 to 1 inch slices. When you get toward the end of the roll, you may have 'leftover's that are not holding together. These can be re rolled into smaller mini wraps, or used as 'samples"!
6. Continue with the rest of the wraps- you will have JUST enough cream cheese for all of them.
7.  Place pinwheels on plate or in container and chill for at least 2 hours to set firmly. If they set overnight it is best, as all the flavors will set in better!

Crabby Bacon Cheese Pinwheels

Ingredients:

1 package of Spinach wraps
1 1/2 box of cream cheese, softened
1/2 cup mayonnaise
1 can of shredded white meat crab
Bacon bits (note I used the real type ones, bot the hard crunchy ones)
1 bag of shredded cheese  (I used Mozarella, you can use Monterey Jack or Swiss too)
Dill or Provence Blend Seasoning
Pepper
Salt

Directions:

1. Take softened cream cheese, mayo, and dill/Provence spice, and mix well. Add pepper and salt to taste.
2. Lay out one wrap and cover with cream cheese mix.
2. Layer bacon bits and shredded cheese on top of cream cheese mix.
4. Starting on one side, carefully roll up wrap until all of wrap is rolled.

  2. these both sound sooo good, I love all the little extras that put them over the top. I can't wait to try making them... and eating them - perfect for that outside spring and summer get together!!
