Recipe Weekend: All About Soda Bread!

Do you know WHY we celebrate St Patrick's Day on March 17 specifically?
Because that is the day St. Patrick died! Nothing complicated about that!

The food that get's served, that's a whole other matter....

Everybody says "Oh are you making soda bread and corned beef/cabbage today?"

SIGH.....


Well at least ONE of those is Irish....LOL


Did you know that they have printed recipes from Ireland for soda bread way back in 1836
WHO knew!

And do you know what ONLY is supposed to be in soda bread?

Flour, Salt, Baking Soda, Buttermilk.  

HUH. Did you know that?

If you add anything else, then you're making Cake!

SO in providing an accurate recipe- here's one from Irish Central, which is pretty much the same as my grandmother's recipe!

Brown Soda Bread

Ingredients:
2 cups all-purpose flour

2 cups whole wheat flour
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 cups low-fat buttermilk
Cooking spray

Directions: 
1. Preheat oven to 450F.


2. Combine the flours, baking soda and salt in a large bowl. Mix thoroughly.

3. Make a well in the center of mixture. Add buttermilk to flour mixture; stir until blended (dough will be sticky).
4. Turn dough out onto a generously floured surface. Knead lightly 4 to 5 times.
4. Shape dough into an 8-inch round loaf; place on a baking sheet coated with cooking spray.


6. Bake at 450 for 15 minutes.

7. Reduce oven temperature to 400 and continue to bake for another 15 minutes, or until loaf sounds hollow when tapped underneath.
8. Cool on a wire rack. Simple and delicious!
Healthy tip: To reduce calories simply use low-fat buttermilk instead of full-fat buttermilk.
