Recipe Weekend, EXTRA: Hellman's Mayo Taste Test/ Buffalo Chicken Dip Recipe

As it's FOOTBALL play off weekend, you knew you'd get a bonus recipe, didn't you????

Hellmann's Mayo sent me a Taste Test, with 2 samples of their normal (full fat) mayo and their NEW light (1/3 fat) mayo, along with a 75c coupon. No we are serious Hellmann's fans. We ate it on the west coast (as Best Foods) and down south here as well (back to Hellmann's).The only mayo that can think of subbing in our house is Duke's, and it's got to be desperate for that to happen!

So I was thrilled to try the taste test as I dont know about you, but I hate to buy a large/$$ product that supposed to be light and then take one taste and just about gag and know I've just wasted my money, I'll never touch the product again. So a chance to try it for free? Sign me up! Plus I'd tried the light before and just couldn't deal with the aftertaste, so I wanted to see if it had REALLY changed.

The packets are 1/2 a serving each (Hellmann's uses 2 tbsp as a serving for their counting).

I tried the packets first on some chicken salad I was making up. 2 bowls, 2 tastes.

Then to be empirical (ooo- how many times do you get to use THAT word in a post?? ha ha) I tasted them out of the packets.

Then I went and checked online to see which was which. And I have to say I guessed WRONG on which one was Light on the salad test and right on the packet taste test.

Sooooo. I would say that I would be willing to try the Light mayo and be perfectly fine trying it in cooked/mixed foods, as I really couldn't taste the difference. Apparently that double-whipping they do really helps the flavor (sorta liked lo-fat whipped cream cheese actually now that I think about it!).

And now drumroll please.....in honor of the taste test, I pulled a new recipe from Hellmann's good for tailgating or serious football TV watching!






DISAPPEARING BUFFALO CHICKEN DIP




Makes: 3 cups
Prep Time: 15 Minute(s)
Cook Time: 20 Minute(s) 




Ingredients:
2 cups diced or shredded cooked chicken
1/4 cup cayenne pepper sauce*
1 cup Hellmann's® or Best Foods® Real or Light Mayonnaise
1 cup shredded cheddar cheese (about 4 oz.)
2 Tbsp. finely chopped green onions (optional)
1 tsp. lemon juice
1/4 cup crumbled blue cheese




Instructions: 
  1. Preheat oven to 375°.
  2. Toss chicken with cayenne pepper sauce. Stir in remaining ingredients except blue cheese. Turn into 1-1/2-quart shallow casserole, then sprinkle with blue cheese
  3.  Bake uncovered 20 minutes or until bubbling. Serve, if desired, with celery and/or your favorite dippers.

Pretty simple and pretty yummy! AND a good way to make use of that leftover rotissiere take out chicken from the night before!
