I donlt know about ya'll, but down here it's getting HOT and MUGGY already! But it's still strawberry season, so here's some great 'light' and cooling strawberry recipes!
To serve, stir in sparkling water; ladle over ice cubes in tall glasses. Serve with spoons.
Strawberry Iced Tea Fizz
Ingredients:
1/2 cup sugar
ice cube
2 cups strawberries, stemmed and sliced
1-1/4 quarts boiling water
1 orange pekoe tea bag
1-1/2 cups frozen lemonade concentrate, thawed
4 cups chilled sparkling water
Cooking Directions:
- In large bowl combine strawberries and sugar; set aside.
- In another bowl pour water over tea bag; steep 5 minutes. Discard tea bag; cool tea to room temperature.
- Stir tea into strawberry mixture along with lemonade concentrate; chill.
To serve, stir in sparkling water; ladle over ice cubes in tall glasses. Serve with spoons.
Strawberry Heaven
Ingredients:
1-1/2 cups light frozen whipped topping, thawed, or whipped cream
4 cups strawberries, hulled, half crushed, half sliced
1 tbsp milk
1 angel food cake
Cooking Directions:
- Cut cake horizontally into 3 layers.
- Place 1 cake layer on serving plate.
- Combine half the crushed strawberries and 1-1/2 cup whipped topping in a bowl. Stir in milk.
- Spread half the strawberry mixture on cake layer.
- Arrange half the sliced strawberries on top of the strawberry mixture.
- Repeat layers, ending with cake.
- Frost top and sides of cake with remaining whipped topping.
- Refrigerate at least 1 hour before serving.
- Decorate top and sides with strawberry slices. Store in refrigerator.
