Recipe Weekend: Easy and Delicious Mini Chocolate Chip Scones

In honor of St Patrick's Day, here's a great and easy breakfast for tomorrow morning!




Easy and Delicious Mini Chocolate Chip Scones

Mini Chocolate Chip Scones

Ingredients:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1 teaspoon vanilla
  • 1 cup of chocolate chips
  • 5 tablespoons butter (at room temperature)
  • 1 cup of heavy whipping cream
Directions:
  • Preheat oven to 400 degrees F.
  • Chop butter into small 綌 cubes. Set aside.
  • In a mixing bowl or stand mixer, combine flour, baking powder, sugar and vanilla. Mix on medium until combined. Add chocolate chips and continue to mix on low until chips are evenly dispersed.
  • Add butter and cut into flour mixture using pastry cutter or paddle attachment. When evenly combined, add heavy whipping cream a little at a time until dough begins to stick together when pressed. Do not add so much as to make it sticky.
  • Make 3 same sized balls out of the dough. Using your hands, form dough into a round disc shape and continue working it until the edges are as continuous as possible. Using a lightly floured surface, press until the disc is about a 綌 high. Cut the disc into 6 equal sized pie-shaped pieces. Place on an un-greased cookie sheet. Repeat with the remaining balls of dough. You should end up with 18 scrumptious little mini scones.
  • Bake at 400 degrees for 12-15 minutes or until bottom of scones become a light golden brown. Let cool slightly on cookie sheet.
  • Optional topping ideas:
  • You can drizzle melted chocolate on top of completely cooled scones. You could also brush them with a glaze made of powdered sugar and just enough vanilla coffee creamer to create a yogurt-type consistency. Let these stand about 20 minutes for the glaze to harden a bit.
