I was thrilled when Gorton's asked me to check out their products for the Fisherman Friday Sweepstakes. We were really looking forward to trying the new Skillet Crisp tilapia (which comes in garlic or seasoned choices). Perfect for a quick fix meal, they are lightly battered and are perfect for a Summer dinner. Unfortunately our local stores did not have them yet. BUMMER!
But Mom was on the thinking up new recipes brainwave and came up with a SUPERB new creation using the Gorton's Shrimp Scampi, to make a VERY filling dinner, that only takes 10 minutes to make! ANY busy family can appreciate that! SO check out Mom's recipe, and then enter to win TWO FREE Gorton's products- we're gonna have THREE winners! Thanks Gorton's!
Tuscan Shrimp Potato Toss
Ingredients:
2 boxes of your favorite frozen Potato pierogies (see picture below for what we used)
Italian Spice Blend
Parsely
Pepper and salt to taste
Directions:
1. Boil pierogies according to box directions. Drain. Place in large pot.
2. Meanwhile cook Gorton's Shrimp Scampi, according to directions in saute pan. (and no that's not coating on the shrimp- that's all the YUMMY Scampi goodness!). Sidenote: I wish Gortin's would go back to the Scampi being in a bag and easy open-as you can see, the box is 1/3 too big for the contents!)
3. As Scampi is cooking, add seasonings to perogis- salt and pepper to taste, about 1 tbsp parsely and Italian seasonings each, or more/less to your taste.
4. Pour Scampi over perogi. GENTLY mix together. Inhale and go "YUM". And serve!
Note: We served ours with garlic bread and a salad. Both of which can be made while cooking the main dish. So start to finish is right at 10-15 minutes, including taking everything out of the freezer and fridge!
Tuscan Shrimp Potato Toss

This is the easiest recipe, yet it tastes like you spent all day in the kitchen!
So the kids like it? Kiddo INHALED her first serving and eagerly asked for more! SO that's a YES!
Be sure to check out Gorton's website for extra coupons too! Plus they have extras, including recipes on their Facebook page!
Ready to try all the goodness of Gorton's? THREE lucky winners will EACH win TWO FREE Gorton's Product coupons!
