Thanks to Moms Meet we were sent a box of the new Kashi 7 Whole Grain Honey Sunshine Cereal Squares to review with our group of moms (did you know they know have 24 cold cereals in their product line?). You'll get more of that meeting to check out Kashi products later-but I went looking for a great way for us all to sample the cereal and it's many uses, thus the chicken recipe coming up!
Kashi 7 Whole Grain Honey Sunshine Cereal Squares has seven Whole Grains and wholesome corn made into a hearty flour, with each square is gently creased at the ends and baked up all toasty and golden. Then they toss the crispy cereal with naturally sweet wildflower honey, for a taste that’ll make you smile and rethink your childhood! Seriously, the taste will bring back a certain red cereal box with a blue clad pirate on! But it is GOOD for you! WOO HOO! Even the 5 yr old declared it "scrumptious"
The cereal is also available in Berry Blossom too (it is tossed with strawberries, blackberries and blueberries, instead of honey!).

SO in honor of our 70s childhood, here's a great recipe for this cereal!
Kashi Honey Sunshine Crunch Chicken
Ingredients:
2 cps of Kashi 7 Whole Grain Honey Sunshine cereal
1 cp panko crumbs
Salt & pepper
1-3 Tbsp mayonnaise
4 boneless chicken breasts, sliced into strips
Instructions:
1. Preheat your oven to 375.
2. Lightly spray your baking sheet with oil. Grind the Kashi 7 Whole Grain Honey Sunshine cereal in your food processor (or have the kids hit a sealed gallon bag with a rubber mallet, rolling pin or small frying pan)- this second method is much more fun and the kids love 'helping you cook'!
3. Combine the cereal, panko, salt and pepper, then spread the mixture out on a plate (you may want to only put half on the plate in case you don't use it all ... reserving the rest, if not needed to a future use).
4. With clean hands, spread just a bit of mayo on each chicken strip, and then coat each strip in coating mixture.
5. Place chicken on your baking sheet, and bake for 15-20 minutes or until crispy and cooked through (depends on the thickness of your strips).
Serve with honey mustard sauce or spiced mayonnaise, on the side
