I recently told you about the Discover Puffins Facebook Giveaway going on right now,
and in association with that, we were sent a "Discover Puffins Cereal" kit to review!

As you can see, we were sent 5 flavors to experience and a soft Puffin for Miss Grace to 'confiscate' as soon as he came out of the box. It might have had something to do with reading an article in a certain kid's magazine the day before, but she declared he had to go off and live with 'Wolfie'.....

As you can see they became fast friends....

Review: We were sent 5 of the 8 available varieties to try out: Regular, Multi-grain, Honey Rice, Peanut Butter and Cinnamon (the other 3 available flavors are Peanut Butter and Chocolate, Crunchy Cocoa and Fruit Medley). Without a doubt our favorite flavor was Peanut Butter! Cinnamon ran a close second. But the Peanut Butter tastes like a grown up version of Captain Crunch- all the flavorable crunchiness you remember, but none of the bad stuff, and a whole lot less calories! 

In fact, if you are on a diet, these Puffins make a great snack item, as they are so low in calories- for example 3/4 of the Peanut Butter flavor have 110 calories and 2 grams of fat! Original have only 90 calories and 1 gram of fat! 3/4 of a cup is a lot for a snack! The fact that Miss Grace also likes them is so wonderful- these cereals are a great way to get her weaned off the commercial, high sugar/fructose syrup ones! 

The cereal is not available in all stores, so you need to check their store locator to find the closest one to you! Or you can shop online!

I've already started thinking of ways to use the cereal in cooking too! Like crushing and using for a coating on shrimp, or in place of crackers in pie dishes. The possibilities are endless! In fact, Barbara's has a whole page devoted tor recipes! We're going to make these Puffin Muffins next week when Miss Grace is off school- they would be a great breakfast fast food, that is good for your kids:

Ingredients:
1 1/4 cups unbleached or whole wheat pastry flour
1 1/2 tsp. baking powder (unsulphured)
1/2 tsp. baking soda
1/2 tsp. sea salt
1/2 c
up granulated sugar
1 cup Barbara’s Puffins Cereal (Original or Cinnamon), finely crushed (start with about 2 3/4 cups whole cereal)
1/4 cup canola oil
1/4 cup honey
1 cup milk or milk substitute
2 large eggs at room temperature

Directions:

1. Preheat oven to 400° F.
2. Line a 12-cup muffin tin with paper muffin cups. 
3. Mix together flour, baking powder, baking soda, salt. 
4. Add sugar and crushed Puffins (if desired, add 3/4 cup nuts or raisins). 
5. In separate bowl, mix oil, honey, eggs and milk until well blended. 
6. Add wet mix to dry ingredients, blending with wooden spoon until combined. Do not over mix. 
7. Fill muffin cups to 3/4 full and bake for 18 to 20 minutes.
Makes 12 muffins
