Since 1965, Chek Soda has been a part of the American landscape, available at Winn Dixie grocery stores across the South, and a part of the American Summer for generations to kids! With the merge of Bi-Lo and Winn Dixie last year, Chek Soda will now be available at Bi-Lo as well!
Chek soda is available in 26 flavors, including strawberry, peach, grape and orange pineapple, as well as traditional favorites such as cola, diet cola and root beer. Chek mixers include club soda, tonic, diet tonic, seltzer and ginger ale. I was sent a gift pack to review with some of these great flavors:
So I thought it only appropriate to share with you a SIMPLE Summer recipe that uses Chek soda, one that Mom recently found that was Grandma's 'Shhh don't tell anybody how easy it is' cake recipe, and that can be made in less than an hour, with basic ingredients, and that can help you get your Summer off to a great official start! Seriously- look HOW many ingredients there are!
Yes, count them, that is FIVE ingredients....
As it was Memorial Day weekend, we decided we needed to change from a Summer cake to a Patriotic one! So I had to add ingredients to the above photo. It's just SO many, right?
Are you still with me, or have you been overwhelmed by the ingredient list?
I know, I know, just wait til I tell you what else you can do with the same ingredients!
Here's the VERY hard directions:
1. Open Yellow cake mix (your choice of brand, just make sure it is a moist one) and place into large mixing bowl. Set aside for a moment with a wire whisk.
2. Preheat oven to 350 degrees.
3. Spray/oil your preferred cake pan(s) or put cupcake liners in cupcake pans.
4. Open can of Chek soda- your choice of ANY of the 26 flavors- mixers, diet regular, it doesn't matter, you choose! In our case, I went with Fruit Punch, as it was the 'reddest' one we had'.
5. You can sneak a sip if you want, after all, you are working SO hard making this cake, you deserve it!
6. Add can of soda to the Yellow cake mix in the bowl. Mix the two ingredients together.
(seriously, do NOT add any other ingredients, you do NOT need them, unless you want to increase the color with some food coloring!).
7. Add cake batter to your prepared pan, inhaling the wonderful fruitty aroma, and laughing with glee at how you are fooling the kids with your 'hard' work!
8. Bake your cake (or cupcakes) according to the time listed on your cake mix, until cake springs back when touched. For our brand shown above, that actually meant a few more minutes than listed (25 minutes to be exact). Now be sure to go take a lounge break with that cup of coffee shown in the ingredients picture above, while exclaiming "how hard it was to make this cake"!
9. Remove cake from oven, place on wire rack to cool, about 30 minutes.
10. Once cake is cooled, take your frosting and apply to cake. The cream cheese frosting really works well with any of the 'fruit' flavored sodas- it's a good off-set for the fruit flavor. Sprinkle and decorate to your liking. Hint: if you save that sip of soda, you can add it to the icing, for a second surprise!
11. Serve and bask in the glory of your hard work!
The cake is super moist and fluffy once you bite into it, and the fruit punch taste is not overwhelming at all!

No worry about if you have eggs or oil, just grab a can of soda and a cake mix, and you can make the kids happy any day of the week during Summer!
