Recipe Weekend: Watermelon Ice Box Pie

Ah the 4th if July- for our watermelon growing county (Parish to ya'll in Louisiana), that means an abundance of leftover watermelon the next day!

Here is a super simple recipe that makes use of that leftover watermelon, is simple to make with the kids,  and gives you a great ice box pie for the weekend!

Watermelon Ice Box Pie

Ingredients:

1 (3 ounce) package watermelon flavored Jell-O (you have to try this flavor- beyond yummy!)

1/4 cup of water

1 (12 ounce) container frozen whipped topping, thawed

2 cups watermelon cut up into chunks (we made ours about 1/4- 1/2 inch in size)

1 (9 inch) prepared graham cracker crust



Directions:

1. Mix together the watermelon gelatin and water. 

2. Fold gelatin mixture into the dessert topping. 

3. Add cut watermelon to the mix.

4. Pour mixture into graham cracker crust. 

5. Cool in refrigerator for about 3 hours.
6. Top with a watermelon shape cut out from a slice of watermelon, if you want to fancy it up! Add sprinkles too! You can also top with more of the whipped topping!

    1. and the funny part id this was my GRANDMOTHERS recipe! she starting making it when my mother was little, but usually made it with strawberries, being in California! Isn't it weird how the old recipes were so universal?
