National Guacamole Day!

Well call me late with the avocados-Sept 16 is national guacamole day!

I just realized it and went OH NO..........

BUT (there's always a BUT, I know I know)

I happen to have the handy dandy ever true guacamole recipe from El Cholo in LA! Their recipe is from 1955 and it hasn't changed much, except that now we can get our chilies in a can (sweet!).

My mother grew up going to El Cholo whenever she was in LA and we've made variations on their recipe all my life.

So get those avocados and just pretend tomorrow is really the right day and try out this recipe!


El Cholo Guacamole
AVOCADOS5 ripe avocados, preferably Haas (that would be the ones on the
LEFT in the pix, FL avocados, on right, just don't quite work
right)
1/2 ripe finely chopped tomato
1 1/2 yellow hot chilies, finely chopped
1 1/2 Ortega canned chilies (this means take 2 out of can and cut 1 in half!)
1/8 bunch cilantro, finely chopped
1 tsp fresh lemon juice
1/4 tsp salt
1/4 tsp yellow onion, finely chopped

In large bowl, mix all ingredients with wire whisk or potato masher (it is easier if you pre-mash avocado into controllable chunks before your start mixing). Mash til mixed well and your desired consistency. Chilies and cilantro can be altered to your taste.

In theory serves 6.

Now we reduce the chilies and cilantro, for everyday usage. But use the recipe as is for parties.
It all depends on your taste buds. An easy way to test is to use 1/2 of chilies and cilantro called for. Up it from there to your taste. This recipe is never fail.

Chilies and cilantro can be altered to your taste.
