Recipe Weekend: Recipe Compilations from Diet Books Reviewed This Month

I have alot of diet books that I am reviewing for you this month, so I thought a compliation Recipe Weekend might be a good idea!

I picked out my favorite recipes from each book and here they are!

The Super Stress Solution:  Dr. Lee's Famous Salad DressingSuper simple to make and keep on hand in the fridge!

4 tbsp olive oil                        1 tbsp rice wine vinegar
1 tsp Dijon mustard                1 tsp honey
1/2 glove garlic, minced           sprinkle of Mrs Dash seasoning
Optional: Minced basil, oregano or thyme to taste


Mix all together. Serve over your choice of salad.



Denise’s Daily Dozen:  Feta & Cranberry Salad
Simple lunch to make and take! Great for kids too!
3 cps Baby Spinach                1/2 cp chopped cucumber
2 oz roasted turkey breast       2 tbsp crumbled low-fat feta cheese
2 tbsp dried cranberries           2 tsp extra-virgin olive oil
2 tsp balsamic vinegar
In large bowl, combine all the ingredients except oil and vinegar. Mix oil and vinegar and drizzle over salad. ENJOY


Mayo Clinic:  Morning Glory Muffins
These would be a great after-school snack for the kiddos, or for breakfast on the run!
1 cp all-purpose flour                  1 cp whole wheat flour
3/4 cp sugar                               2 tsp baking soda
1/2 tsp salt                                 2 tsp ground cinnamon
3/4 cp egg substitute                   1/2 cp vegetable oil
2 tsp vanilla extract                     1/2 cp unsweetened applesauce    
1/2 cp raisins                              2 cp chopped apples, peels on
3/4 cp grated carrot                     2 tbsp chopped pecans
Directions:
  • Preheat oven to 350 degrees. Line muffin pan with liners.
  • In bowl, mix flours, sugar, soda, cinnamon and salt.  In seperate bowl, mix together egg, oil, applesauce and vanilla. Stir in apples, raisins, and carrots. Add to flour mixture and blend til just moistened, but still slightly lumpy.
  • Fill liners 2/3 full with batter. Sprinkle with pecans and bake til tops spring back when touched, about 35 minutes.
  • Let cool for 5 minutes, transfer to wore rack and let cool. Makes 18 small muffins, 170 calories/7g fat each

One Day Way:  Choco-PB-Banana Breakfast Smoothie (350  calories)
Super easy to make and great for adults AND kids alike!
1 scoop chocolate protein powder  (make sure less than 150 cal per scoop)
1 tbsp peanut butter                                     1/2 cp ice
1/2 banana                                                  1/2 cp skim milk
6 oz water                    
                                      
Blend all ingredients. Enjoy!
