Recipe Weekend/CLOSED/Giveaway/Book Review: Wrap n bake Egg Rolls kids cookbook

Capstone Press recently sent me some wonderful Kids Cookbooks
to try out and I couldn't wait to try some of the recipes from  
Wrap n Bake Egg Rolls! Like the Mexican cookbook I reviewed a
few weeks ago, the book is aimed at Grades 1-3, and includes everything
from the Bakes egg rolls of the title to Honey Hoison Barbecued Ribs!   

I really like how in the beginning of the books they show illustrations of the cooking items needed for cooking with the book. It gives kids a better idea of what is needed to cook with! the illustrations are cute and show exactly what kids need to be doing in each step!

 My daughter really loves the fortune cookies we get at our local Chinese retaurant, so I knew she'd love to try her hand at the Fortune Cookie recipe in the book!

Fortune Cookies

Ingredients:

Confectioners sugar
1 9" store bought pie crust, chilled (note- you need to let it rest before you unroll, or it WILL crack

    and you will need to reroll it to smooth it out again!
2 egg whites, slightly beaten

Tools Needed:
large rimmed baking sheet                 cooking spray
2- slips of Paper, about 2" x 1/2"       nontoxic marker or pen
3" round biscuit cutter or glass           small strainer
Rolling pin                                        small serving bowl
Pastry brush                                     oven mitts
Spatula

1. Preheat oven to 375 degrees
2. Spray cookie sheet with cooking spray
3. With nontosic marker/pen, write fortunes/jokes/secret messages/quotes on slips of paper.

4. Using strainer, sift out confectioners sugar onto work surface, dusting it for rolling. Put pie crust on top

    and roll out any cracks/bumps.
5. Cut out 3" circles out of dough. Dust the top of the circles with confectioners sugar.

6. Fold circle of dough in half over the tips of your index fingers to form the shape of the cookie, leaving space for the fortune, OR you can bake the fortune inside (depends on what is easier for you).

7. Repeat and place cookies onto prepared baking sheet, about 1" apart. Brush tops of cookies with the egg whites using pastry brush.
8. Go back and combine leftover dough and roll out again and cut more circle. Repeat steps 5-7, then repeat this step if needed.
9. Bake the cookies for 15 minutes, til lightly browned. Let cool on the pan itself.

10. Slip frrtunes inside (you may need to fold the paper).

11. Serve or wrap in goodie bags for giving away!

Variation: You can do as we did and after brushing with egg whites, sprinkle with colored sugar, for color and flavor. Or you can dip one end in some chocolate for a classier look!
