I got mine in the mail this afternoon and within an hour was in the kitchen baking!
The cookbook has some old favorites and some soon to be new ones, here's some samples:
I knew we had one box of blueberry muffin mix in the pantry (left over from a pancake breakfast for church, not enough to do much with), so I thought aaha, let's change the recipe a little! So off daughter and I went for a super quick and easy recipe (great for toddlers to mix up) that made just the right amount of cookies for the dessert!
Raspberry (aka Blueberry ) Cookies
(10-12 Cookies-I got 14 by using 2 iced teaspoons to make by rounded drops)
1. Preheat oven to 375°, grease baking sheet (I used Pam Butter Spray-result was a yummy crust on bottom!).
2. Combine muffin mix, pudding and oats. Blend in margarine or butter until mixture resembles fine crumbs. Mix in egg until well blended. Roll into 1" balls. Place on baking sheet and flatten slightly with fork. (I just used more of a rounded drop than rolling into a ball-they did fine as you can see)
3. Bake 10-12 minutes or until lightly browned (we had to go about 12-14)
See, super quick and easy! It's hard to describe these cookies- they're like a muffin-cookie. Hard on outside like a cookie, chewy like oatmeal cookie, but tastes like muffin in the middle. Perfect for early morning breakfast on the run- easier to handle than a muffin while driving! Great snack for the kiddos during the day as well!
