Product Review / Recipe Bonus: LaTortilla Factory Wheat Torillas

As you know from my earlier post, we all came back from the We Blog Conference with LOTS of items from the wonderful sponsors!

Having grown up in Southern California (up til junior high), I got pretty excited when I saw a FRESH pack of La Tortilla Factory's new 100 Calorie Whole Wheat Tortillas!  Tortillas are like bread to me- given the choice, most of the time, I'd rather have a tortilla than a slice of bread. Our daughter is the same way- rollups are her favorite thing and have been for almost 2 years! So they are staples in our house and we hadn't tried the new wheat ones yet, so I was thrilled!

These tortillas have all of the taste and texture traits of traditional tortillas, with only 100 calories each, (compared to traditional tortillas that contain as many as 200 calories or more), added fiber, Omega 3-rich flax seeds, added calcium and absolutely no hydrogenated or partially hydrogenated oils. The tortillas have 8 grams of fiber, 100 Calories, just 1.5 grams of fat and 20 grams of whole grains per tortilla!

What all that means is that a)the tortillas are really GOOD for you and b)the tortillas will FILL you up and keep you full with all that fiber, thus you EAT LESS than with a traditional flour tortilla!

We tried the tortillas with some quick cheese and chopped tomato quesadillas for lunch yesterday and were
very happy with the results! No one needed seconds, one more than filled you up! Even our daughter tried some 'Mexican Pizza' and liked it! The tortillas held up well with frying (I know BAD, but it was what we all had craving for and I wanted to give tortillas a good test!) and had a great flavor. NOTE: the wheat tortillas BURN quicker than flour for some reason! So you have to keep a steady watch on them when frying, else they might start to burn! We really liked the quesadillas, but all thought the tortillas would really be better as enchiladas- they're being sturdier would make for a better enchilada! I didn't have any left to experiment with, so I thought iId just share
one of La Tortilla Factory's enchilda recipes with you!

Low Carb Chicken Enchiladas

Ingredients

  • La Tortilla Factory Whole Wheat Low Carb Tortillas Original Size™
  • 1 bag shredded Cheddar cheese
  • 1 bag shredded Monterey Jack cheese
  • 20 ounces cooked chicken strips
  • 1 (8 oz) can red enchilada sauce
  • 1 can sliced black olives
  • 1 bunch green onions
  • 1 large white onion

Directions

  1. Blanch tortillas by dipping them one at a time into boiling water for 2-3 seconds.
  2. Lay tortilla flat and place 2 ounces of cooked chicken strips inside. 
  3. Sprinkle one ounce each of shredded Cheddar and Monterey Jack cheese.
  4. Top with white diced onion. 
  5. Roll tortilla and place seam side down in a casserole pan. 
  6. Place in oven and bake for 20 minutes at 350ºF, (an internal temperature of 160ºF.) 
  7. Remove from pan and pour remaining sauce from heated pan onto the enchiladas.
  8. Garnish with diced green onions and sliced olives. 

Note:
Now if you want to make the enchiladas, more deluxe (ie more fat/calories), then take the can of enchilada sauce and add to one can of tomato soup. Yes, tomato soup. TRUST ME- it makes the difference!  Before starting step 2 above, spoon sauce over bottom of pan to cover- not heavy! Continue with step 2. Add chopped or sliced black olives on top of chicken and before cheese (step 3). After Step 5, cover enchiladas with rest of sauce. Combine 1/4 cp of each of your cheeses and place on top of rolled enchiladas, then place olives on top as well. Continue with steps 6 and 7. At step 8, just add the green onions, if you wish them.
