Recipe Weekend:Spiced Pecan Bourbon Balls

As it's National Coffee Month I thought it was only appropriate to have a coffee recipe today! The holiday season will be upon us before you know it, so here's a recipe that's perfect for gift giving and for adult get togethers! These are perfect in the fall!


Spiced Pecan (Mocha) Bourbon Balls



Ingredients

  • 2 1/2 cps finely crushed Vanilla Wafers
  • 2 tbsp unsweetened cocoa pwoder
  • 1 cps finely chopped Pecans
  • 1 tbsp instant espresso or coffee powder
  • 1/4 tsp ground cinnamon
  • 3 tbsp light corn syrup
  • 1 2/3 cp Powdered Sugar- divided
  • 1/3 cp Bourbon Whiskey

Directions:

  1. Combine vanilla wafers crumbs, cocoa powder, chopped pecans, espresso powder, cinnamon, corn syrup and 1 cp powdered sugar in large bowl.
  2. Stir in enough of the Bourbon for mixture to hold together easily.
  3. Form mixture into 1 inch balls. 
  4. Place remaining 2/3 cp powdered sugar in shallow dish or bowl. Roll balls in powdered sugar, cover. Let stand for 2 hours.
  5. If desired, roll again in additional powdered sugar. Refrigerate for up to 1 week, or freeze up to 2 months, in an airtight container, between layers of wax paper.Makes about 32 balls.
Note: you can also make up a mix of cocoa, espresso powder and powdered sugar and roll balls in that first, then reroll in the powdered sugar after chilled.  OR roll as above, at step 4, then roll in crushed pecans.  One word: YUMMY
These are perfect for make and take get togethers  during the holiday season as they freeze and keep well!
