Well it's Green Bay Packers and the Pittsburgh Steelers later today in the Super Bowl '45', so I thought we'd go with a 'themed' Recipe Weekend Post!

When I think GREEN and BAY, I automatically think of Mom's recipe for Crab Cakes made with Old bay seasoning!
Mom"s Crab Cakes:
Ingredients
- 1 egg, beaten
- 2 tbsp mayonnaise
- 2 tbsp green onion tops, diced
- 1/4 tsp Old Bay seasoning
- 1/4 tsp hot sauce (or less depending on personal taste)
- 1 lb lump crabmeat, drained and cleaned for shells
- 4 tsp milk
- 10 saltine crackers (we use Nabisco regular), finely crushed (put in SEALED sandwich bag and roll with heavy glass for quickest/less mess way!)
- 6 tbsp oil, for frying
- Lemon wedges, for serving
Directions
- Mix egg, mayonnaise, green onions, Old Bay and hot sauce (to taste) in a small bowl until mayo is completely incorporated, then set aside.
- Lightly break up crabmeat in a medium bowl. Add milk; toss gently to coat. Add crushed crackers; toss gently to combine. Add egg mixture; gently toss, once again, to combine. Using a 1/3-cup measuring cup, scoop up a portion of crab, forming the mixture into a very compact cake. Repeat to make 8 cakes (can be covered with plastic wrap and refrigerated up to 8 hours ahead).
- About 10 minutes before serving, heat oil in a 12-inch skillet over medium to medium-high heat. Carefully add crab cakes; sautee turning once, until golden brown, about 3 minutes per side. Transfer to a paper towel-lined plate. Serve immediately with dollop of mayo blend on top of each crab cake, and with lemon wedges, if preferred.
- Note: we like to take extra saltines and fry in any remaining oil- yummy snack for the cook while finishing the rest of the meal!
And now on to the competition! Pittsburgh and Steelers equate out to Dill Beer bread. Another MOM speciality!
Dill Beer Bread
Ingredients:
- 3 cps flour
- 1 tbsp sugar
- 1 1/2 tbsp baking powder
- 1/4 tsp salt
- 12 oz beer
- 3 tbsp fresh dill (or 1 tbsp dried dill weed)
Directions:
- Heat oven to 375. Butter a loaf pan.
- Sift the flour, sugar, baking powder and salt into a mixing bowl. Stir in the beer and dill.
- Scrape the batter into the prepared loaf pan and bake 55-60 minutes or until brown on top and knife inserted into the center comes out clean. Allow to sit in the pan 10 minutes, then cool on rack.
