Recipe Weekend: Easter Fulffy Mashed Potatoes

I don't know about you, but we have certain foods that are pretty much staples in our family's Easter dinner. Oh, we've tried Easter without them, but everybody always complains after wards and wants them back, so back on the menu they come. We do sometimes try to alter the recipe for the item, to 'freshen' it up. Sometimes it's great, sometimes we go back to our traditional recipe!

So I was happy to check out a new Mashed Potatoes Recipe from our friends at My Baby Clothing Boutique! Being MOMS, they have some great family recipes to share with us, and I am happy to bring them to you before Easter!

Fluffy Mashed Potatoes
 
"These mashed potatoes are so fluffy and creamy you won’t be able to resist this amazing recipe. With our secret weapon, fat free buttermilk, you’ll be convinced you are cheating. These potatoes don’t actually hover over your plate like a big fluffy cloud of goodness, but they are so good you will be walking on cloud nine."

Ingredients:
● 5-6 large Idaho Potatoes
● 1 whole clove of garlic
● ¼ tsp Extra Virgin Olive Oil
● ½ to 1/3 cups of Fat Free Buttermilk
● Salt and pepper to taste
 
Instructions:
● Preheat oven to 400 degrees
● Cut the top off of a whole clove of garlic exposing each individual clove
● Pour olive oil over the top, wrap in foil and bake 35-40 minutes
● Peel and dice potatoes while garlic is roasting
● Steam potatoes for 20-25 minutes or until tender
● Add potatoes to buttermilk and mash until creamy
● Take garlic out of oven, press cloves onto a cutting board and rub with back of spoon
until smooth
● Add garlic and salt and pepper to potatoes
● Mix and add butter to taste
 

Add these magnificent potatoes as a side to any dish and enjoy!
