Recipe Weekend: Southern Styled Green Beans

This recipe for Southern Style Green Beans comes from Godfrey Hebert, Food and Beverage Director, The Island Country Club, Plaquemine, LA, and posted in Louisiana Cookin Magazine, and is pretty close to Mom's, so I thought I would share it, as it is perfect for Easter!

Servings: Serves 8

Ingredients:

•2 pounds whole fresh or frozen green beans
•1 tablespoon salt
•1/4 cup vegetable oil
•1/2 half cup finely chopped raw bacon
•1 tablespoon sugar
•1/2 tablespoon ground black pepper
•1 cup chopped onions
•1/2 cup beef broth (or 1/2 cup water and 2 teaspoons salt)
•2 tablespoons minced roasted red pepper

Instructions::

1. In a 4-quart pot, add 3 quarts water and salt. Bring to a boil.
2. Add the green beans and return to a boil.
3. Blanch beans 5 minutes until the color deepens but the beans are still crisp. Note: The green beans can be served with a fresh crunch still in them or, for a more traditional style, cook them until soft, about 20 minutes over medium heat, after the bacon-onion seasoning is added.
4. Drain the beans immediately and return them to the pot. Cover and set aside.
5. Add the oil and bacon to a skillet set over medium-high heat and cook, stirring occasionally, until the bacon renders out its fat and the bacon is in crisp bits, about 5 minutes. Stir in the sugar and black pepper.
6. Cook until the sugar begins to lightly brown and caramelize, about 4 minutes.
7. Add the chopped onions and sauté until translucent, about 5 minutes. Add the broth and continue cooking until the onions are soft, about 2 minutes.
8. Add the roasted red peppers and remove pan from the heat. Pour the hot onion-bacon mixture over the drained green beans.
9. Toss gently to completely coat the hot green beans. Cover and allow the green beans to absorb the flavor of the seasoning, about 20 minutes. This is important- they get better as they sit!


Note: We usually fry up the bacon before we start the green beans- it tends to time out better that way...Plus you can snack on a piece!
