Recipe Weekend: Book Review: Betty Crocker The Big Book of Slow Cooker, Casseroles & More

I know, I know, Recipe Weekend on Monday? BUT....
it IS a LONG weekend for most of ya'll out there, and I did not have a chance to blog yesterday, so I thought, why not HAVE the review, but on Monday, the last last day of the long weekend? See makes sense, right? 


I won this book from a recent giveaway on Make Ahead Meals for Busy Moms! Jane has been a big supporter of this blog from it's beginning, and I adore her own cookbook, so I was thrilled to win this book from her giveaway! The book is a super cookbook and a perfect book for a new cook, a housewarming present, or just to shake up your routine. AND as it's Betty Crocker, you know you can't go wrong with it!

I was thrilled to find one of my grandmother's favorite baby back rib recipes in the book! She never wrote it down, and none of us had the recipe! And as so many of you will be barbequeing today, I knew I had to share it with you! Now it is made for the crock pot, but if you are eating later tonight, you've got time! It's also easy to double, if using the XL cooker.
apple ribs

Smoky Apple Butter Ribs 
Makes 4 servings



Ingredients:
3 lb boneless pork country-style ribs
3/4 teaspoon salt
1/2 teaspoon pepper
1 medium onion, sliced
1/2 cup apple butter
2 tablespoons packed brown sugar
1 tablespoon liquid smoke
2 cloves garlic, finely chopped

Instructions:
1. Sprinkle ribs with salt and pepper. Put ribs in 3- to 4-quart slow cooker, cover with onion slices. In small bowl, mix remaining ingredients. Pour mix over ribs and onion.
2. Cover, cook on Low heat setting 8 to 10 hours.
3. Remove ribs from cooker, place on serving platter. Cover to keep warm.
4. Pour juices from cooker through strainer into 1-quart saucepan. Heat to boiling over medium-high heat. Reduce heat to medium; cook about 5 minutes or until sauce has slightly thickened. Serve sauce with ribs. 

We serve ours with homemade potato salad or coleslaw! ENJOY!

This book is a really good all-around book- there's crock pot and casserole recipes perfect for a pot luck, new sides for you to try and some really great stove top main dishes!

  • Caramelized Onion Pot Roast -which is another of my Grandmother's recipes!
  • Weeknight Paella -another great use for leftovers during Summer!
  • Parmesan-Butternut Squash Gratin - uber-perfect for summer harvest from your garden!
  • Seafood Bisque- always yummy with fresh seafood during the Summer!
  • Mini Italian Meat Loaves -perfect for freezing for summer nights when you don't want to cook!
  • Grandma's Slow Cooker Chicken Noodle Soup- spices may be a little different, but it's close to Grandma's!
  • Chive-and-Onion Creamed Corn-another fav from Grandma!



I wasn't too impressed with the desserts (which is my only complaint about the book) but that may be because the ones included are are family standards. The Raspberry Bread Pudding, Toffee Apple Turnover Pie and Fresh Berry Crisp are all prefect for Summer eating!


Overall I would say this is one of those books that should be part of the Top 10 to have on hand in any kitchen!
