Well the holidays are OFFICIALLY upon us!


I was going thru my cookbook stash, and found this little booklet and 
knew one of you would LOVE to have it, as it has spectacular
appetizer and holiday recipes!

The Lobservateur is the local newspaper for St James Parish, here in Louisiana.
So you KNOW you're gonna get some wonderful recipes, like
Coke Soaked Fried Venison, Red Bean Gumbo, Cajun Gourmet Beer Burger
and Shrimp Jambalya!
This booklet is from 2010.


Here's one to whet your appetite while you try to win it! It's perfect for a side dish,
or if you want to be creative, make minis of it in mini muffin pans, for an appetizer
(just place inside pie shell, to keep it in place-rounds cut from prepacked pie dough work great, just cook first so they are crispy!).


Crawfish or Seafood Casserole

Ingredients
1 stick butter
green onions, chopped
1 chopped onion
1/2 bell pepper, chopped
1 can cream of celery soup
1 can cream of mushroom soup
1 lb crawfish, shrimp or crab
1/2 tsp tabassco sauce
Cajun Seasoning (Tony's or Slap Ya Mamma preferred)


Instructions:
1. Cook rice according to directions. Then preheat oven to 350 degrees.
2. Melt butter in large saute pan, add onions, green onions, and peppers. Saute until clear. (note: if you live in the South, and can get Holy Trinity already made up, you can use about a cup of it instead of chopping the three items).
3. Add seafood and cook several minutes. Add soups and seasoning.
4. Add cooked rice to mixture. Combine.
5. Spray baking dish with non-stick spray, or wipe with butter. 
6. Place mixture into baking dish and top with bread crumbs.
7. Bake for 30 minutes.
