Product Review: Bertolli Meal Soups Make a Weeknight Special Challenge

I was thrilled recently to be accepted in the Make a Weeknight Special Bertolli challenge.

We were offered a new Bertolli product and given 1 hour max of prep time, to make a extra special meal for our family, and then to share our tips with each other and our fans/readers.

We've loved EVERY Bertolli product that we've tried, so it was a no brainer to say yes.

What are their new Frozen Meal Soups? They are hearty,fresh-tasting easily made soups with vegetables, meats, pasta and herbs. They are all individually flash frozen at the peak of freshness, so your soup tastes homemade. In fact they can be made, from start to finish, in UNDER ten minutes! How is THAT for quick and easy?

There are four varieties of the new Bertollli Meat Soup:

Chicken Minestrone 

Roasted Chicken and Rotini Pasta 

Tomato Florentine and Tortellini with Chicken 

Tuscan-Style Beef and Vegetables

I picked the Tuscan-Style Beef and Vegetables Soup to try, as we all love Mom's homemade vegetable soup, with it's chunks of meat, so I figured we'd love this Bertolli Meat Soup. It has tender beef, mushrooms, yellow squash, zucchini, carrots and celery with bowtie pasta in a savory broth. Hungry yet? 

Now unbeknownst to me (OK, well I KNEW I was in pain, but didn't realize what I HAD done), I had suffered a pretty good foot injury the day before. So when I saw my GP, as scheduled for annual visit, I was not expecting her to say, let's X-ray and then see if you BROKE a bone in your foot. I thought it was a sprain. Apparently this is a widespread happening in our area this week, as the ortho couldnt see me til Thursday. So my GP recommended staying OFF my feet as much as possible, and elevating my bad broke foot, until I could see him. 


Hmm, ok, so dinner was gonna be special after all- aka:
 Last Day Mom Can Stand and Cook Dinner!

Ok, so I can roll with that! Over to Target to pick up the soup, grabbed a great bake n fresh French Bread loaf, and some great Pinot Grigio. With the salad in a bag, we already had in the fridge, I knew dinner could not only be QUICK, it could be yummy!

The Bertolli Meal Soups for Two are available in 24 oz. packages, so I bought 2, in order to serve 3 adults and a 4 yr old old that adores soup! When I opened the first bag, I was amazed at not only the yummy smell wafting up from it, but the gorgeous pieces in it! When was the last time you saw FROZEN food looking so great?

ALL I had to do, was to add two cups of water to the bag ingredients, boil, then simmer and waa-la I had 32 oz. of mouthwatering soup, in less then 10 minutes!  

As the soup was cooking, I put the bread in the oven (it only required 5 minutes to get crusty and yummy like it was from a bakery). Then rinsed the salad, chopped some tomato and red onion, and  ta-da, instant salad.

Looks good huh?

How about a close up, to really start those salivary glands going?

Not only was the soup BEYOND yummy, it was filling and made everybody happy! Kiddo called it Ratatouille soup, as it had such large pieces of squash and zucchini! It's hard to get kids to eat healthy, so if you can find a QUICK and easy, beyond healthy meal, that you can make in less than 30 minutes and you get THIS response:

That's right, a THUMBS UP! She and Papa had 2 full servings each (I'm still on small servings)! Plus everybody agreed, we need to try the other soups, and

definitely keep Tuscan Beef and Vegetable on the normal dinner rotation!
