Well I'm going through ye old cookbooks, while we're moving stuff around and decided that these 2 were a great little Summer giveaway! The pasta dishes are light for the most part and as it's swimsuit weather, everybody wants desserts with less calories, so i know quite a few of you will want the Hungry Girl cookbook too!
Here's a quick and easy recipe from the Ronzoni Pasta cookbook, that highlights Summer veggies, and that you can substitute your favorite seafood or chicken/turkey into (It's pictured on the cover of the book too!):

RONZONI TUNA FETTUCCINE PRIMAVERA
Ingredients:
6 oz. Fettuccine, uncooked
1 can (10-1/2 oz.) ready-to-serve low sodium chicken broth
1/4 cup skim milk
1 tablespoon reduced calorie margarine
1 cup sliced fresh mushrooms
3/4 cup fresh broccoli florets
3/4 cup diagonally sliced carrot
3/4 cup small fresh snow pea pods
1/2 cup chopped onion
3 cloves garlic, minced
1 tablespoon chopped fresh parsley
3 tablespoons all-purpose flour
1 can (6-1/2 oz.) chunk tuna in water, drained and flaked

1-1/2 cups chopped cooked chicken, or shrimp, or crab, or crawfish, may be
substitited for the tuna)
2 tablespoons grated Parmesan cheese
2 tablespoons sliced almonds (optional)

Instructions:
1. Cook pasta according to package directions, drain.
2. Meanwhile, in small saucepan, heat broth and milk until hot.
3. In large skillet, melt margarine. Add vegetables, garlic and parsley; cook until vegetables are just tender.
4. Stir flour into vegetables.
5. Gradually stir broth mixture into vegetables, stirring constantly, until mixture is thickened and bubbly.
6. Stir in tuna (or other meat) and cheese, til combined well.
7. Serve sauce over hot pasta. Sprinkle with almonds, if desired.
Yield: 4 servings: 330 calories each, 45g cab, 7g fat, 23g protein (if made with Tuna)

There are actually under 15 recipes in the book, but they are ALL yummy! AND they are ALL under 200 calories per serving! The rest of the book clues you into supermarket and restaurant treats, that aren't too high in calories, as well as exchanges you can make. Ready for a sample recipe, that you AND the kids will be fighting over, that is BEYOND super easy?
Hungry Girl Frozen Fantasy Chocolate Peanut Butter Cups
Ingredients:
1 container fat free Cool Whip Topping
1/2 cp all natural crunchy peanut butter
2 oz Hershey's Lite Chocolate Syrup
Instructions:
1. Line muffin pan with liners
2. Combine peanut butter with 1 cp of the whipped topping, with a whisk.
3. Fold in remaining whipped topping and syrup.
4. Spoon in to 12 lined cups. Freeze.
5. Fight with kids over the last cup left!
Each cup= 80 calories (yes, 80), 10g carbs, 3.5g fat, 2g protein

I've gotten a lot of good ideas watching HG on tv! One thing everyone loves in the summer is pasta salad. Easy to have everyone eat at different times too.
