Recipe Weekend / Giveaway: A Taste of the Irish!


In honor of Miss Grace and the Krewe of Erin, I thought it only appropriate to have am Irish recipe AND an Irish giveaway!


So how about a great little Irish Cookbook, from the books I'm culing out of the extensive cookbook collection?

This little book has it all- appetizers, main courses, stews, side dishes, desserts and even breads!
(admittedly my copy is missing about 6 recipes, that have been torn out over the years, but that's still over 65 recipes for you!)

So I grabbed a recipe I thought everyone would like, that is easy to make, and will be great for the St Patrick's Day dinner table, and any time during the year!

Irish Soda Bread Muffins

Ingredients:


2-1/4 cups all-purpose flour
1/2 cup plus 1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1 teaspoon caraway seeds
1 egg
1 cup buttermilk
1/4 cup butter, melted
1/4 cup canola oil
3/4 cup dried currants or raisins

Directions
1. Preheat oven to  400°.
2. In a large bowl, combine the flour, 1/2 cup sugar, baking powder, salt, baking soda and caraway seeds.
3. In another bowl, beat the egg, buttermilk, butter and oil.
4. Stir into dry ingredients just until moistened. Fold in currants.
5. Fill greased muffin cups three-fourths full. Sprinkle with remaining sugar.
6. Bake for 15 minutes or until a toothpick inserted near the center comes out clean.
7. Cool for 5 minutes before removing from pan to wire rack. Serve warm. 

Makes one dozen.

  1. I am only a wee bit Irish on my grandmother's side. Since everyone will be working I doubt there will be corned beef & cabbage for dinner.
