This book is subtitles "Easy Menus For Casual Entertaining", which to me is the perfect phrase for Summer dining, so I wanted to share it with your this weekend!

Having spent many weekends and summers on the South Fork of Long Island, Wright shares a wealth of recipes and insights to make entertaining as simple, elegant, and delightful as possible.

Complete meals for every occasion are carefully planned for ease of preparation. In spring, under a crab apple tree, enjoy a buttery asparagus quiche. After a day at the beach, transform summer's road-stand tomatoes into the ultimate gazpacho. Autumn is the time for sizzling potato pancakes with chunky applesauce, made at a farm just down the road. On the first chilly night of winter, spoon up a warming veal stew with button mushrooms. Ellen also shares a collection of irresistible desserts, quick side dishes, and refreshing salads, as well as ideas for one-of-a-kind table settings.

After years of successful entertaining, Wright has developed a number of commonsense tips that she shares with her readers. Including five basic principles: 

  • Keep it simple--perfect a few dishes rather than try to dazzle with many

    Review: I read through this book wondering of  Ellen and my Grandmother were related! Grandma hailed from New Hampshire, but SO many of the recipes are the same as our family recipes! What is weirder to me, is how many echo the recipes of my Southern great grandmother. Sorta along the line of freaky weird, which just means that for me, this is like a family recipe album! LOL

    The gorgeous photographs really set off the recipes and show you what the food should look like I liked the idea of cooking by season, as that way you have the freshest ingredients that can be bought at farmers market (or your local grocery- there were barely any 'odd' ingredients in the whole book)- she was doing farm to table before it became popular! The menus are well thought out and should appeal to a wide amount of palates. By simplifying the menu, and using her handy tips, she shows how you can in effect, spend more time on entertaining, and less time cooking! .

    Wright also provides a glossary to wineries in the New England area, which is helpful, if you plan on visiting the region. In fact, this would be a lovely hostess gift in a basket of food items, for a hostess you are staying with this Summer, on vacation! The pictures will definitely get you in the mood for visiting the Hamptons as well! If you're a 'foodie' you'll want to check out this lovely cookbook!

    Now how about a recipe?

    This scrumptious Bourbon Cake is well worth the time, and perfect with a side of Summer berries n creme!!

    Ingredients
    For the cake:
    • 3 sticks  (1-1/2 cups) butter, at room temperature; more for the pan and wax paper
    • 1/2 cup plain dried breadcrumbs 
    • 3-1/2 cups sifted all-purpose flour
    • 1/2 tsp. baking powder
    • 3 1/4 cups lightly packed light brown sugar
    • 5 large eggs, at room temperature
    • 1 tsp. pure vanilla extract
    • 3/4 cup milk
    • 1/2 tsp ground mace
    • 1/4 cup bourbon

    • For the glaze:
    • 1/2 cup granulated sugar
    • 1/4 cup bourbon
    Directions:
    1. Preheat oven to 350°F. 
    2. Butter the inside of a 10-inch (12-cup) Bundt pan and seet aside. Butter one side of a 16 inch round of waxed paper, and fit it into the Bundt pan, butter side up, making a hole in the middle, to fit the sides and bottom.Use small piece of wax paper around the funnel (won't fit exactly). 
    3. Sprinkle the bread crumbs into the pan, knocking excess out. Set pan aide.
    4. In an electric mixer at medium speed, beat the butter and brown sugar together, until smooth (about 3 minutes).
    5. In a small bowl, combine flour and baking powder. 
    6. In second small bowl, mix the eggs and milk together.
    7. Alternately add the flour mixture and egg mixture to the brown sugar mixture, and combine til smooth, 10 minutes total for best results.
    8. Add vanilla and mace to your mix, then add bourbon and continue to mix til combined, about 4-5 minutes.
    9. Pour the batter into the prepared Bundt pan and bake until golden brown and a cake tester or skewer comes out clean, 70 to 80 minutes. Let the cake on a rack, in the pan, for 20 minutes.
    10. Make the glaze while cake is cooling- place sugar and boubon in small saucepan over lowest heat possible (it overcoks VERY quickly and can then be hard to apply), and cook til the sugar is dissolved, about 3 minutes. 
    11. Unmold the cake onto a serving plate and glaze while still warm.
    12. Paint the glaze on the warm cake with a pastry brush, or drizzle on with a spoon.
