Secondly, it will inspire to get your kids to break OUT of the sandwich routine and see how leftovers can be a super cool lunch! Thirdly, you will see how you can make a healthy lunch that is NOT full of processed foods!

The are literally hundreds of quick, healthy and delicious ideas to make mid-day meal winners within the small pages of this book! With ideas like turning last night’s Lemon-Paprika Roasted Salmon leftovers into today’s Deconstructed Sushi lunch, to Ham and Cheese Muffin cups with a side of Brown Sugar-Cinnamon Apples, this book is perfect for both kids and adults, as it expands what you think of 'lunch' to something new and better for you!

Check out a couple quick and easy lunch ideas:

Mac N Cheese
Whether you make a little or a lot, pasta takes about 10 minutes to cook. So you might as well make a lot and use the leftovers as an easy building block for lunch the next day. Toss cooked pasta (any shape) in a saucepan with grated cheese, sour cream, and a splash of hot sauce (or Tony's) for an easy two-minute mac and cheese (pack it hot in a thermos). Add veggies, like brocolli, and you've got a healthier lunch! Or toss cold with leftover vegetables (anything goes), any leftover meat (or not), and vinaigrette for an instant pasta salad.

Wrap it Up:
Get got the sandwich blues? Try wrapping leftovers in big lettuce leaves or piling deli meat and cheese between two seeded cucumber halves. Save those leftover pancakes and use them as sandwich starters, or grab some phyllo cups and stuff them with whatever you’ve got handy, even making them into mini-quiches, which are kid-hand size friendly and fun to eat! 

Leftovers are Your Friend:
Many leftovers can be 'doctored' with BBQ sauce, mayo or mustard and turned into an unique topping for a sandwich or with pasta. So rethink the small hunk of roast beef into Beef Stroganoff, BBQ Beef on Bun or even Chop Suey! Left over roast chicken? Chicken salad or chicken pasta time!

Cheese and Meat Quiches are an excellent way to make use of those mini muffin pans you bought years ago! This simple recipe from the book is easy and can be made at once, and the quiches frozen and used as needed! I'm including the recipe variations for the full size quiche, in case you can't find the cups, you can make it instead and slice it for individual servings).
