It's been one of THOSE weeks, so we haven't had a chance to get in the kitchen and cook, so unfortunately, no new recipes to share this week!
But I know we've all ran into the problem of thinking you have an ingredient for a recipe starting it, and then realizing you are missing a key ingredient! So I figured a post about substitutes might be great for today!

1. Baking Powder- Color my WAAAY guilty on this one, I practically know this one by heart! There are 3 substitutions, based on what you have on hand:
a. 1/4 tspn baking soda added with 1/2 tspn cream of tartar and 1/4 tspn cornstarch
b. 1 1/2 tspn single-action baking powder
c. 1/4 tspn baking soda, added with 1/2 cup buttermilk (you can also use yogurt) to replace 1/2 cup non-acidic liquid
2. Light Corn Syrup- this used to be a staple in the pantry, but with modern cooking, typically we only have it around the holidays for Pecan Pie! You can substitute honey 1 for 1, or you can substitute 1 cp of sugar for 1 cp of corn syrup, just increase the liquid in your recipe by 1/4 cp.
3. Half-and-Half- Substitute 1/2 cp reduced-fat milk and 3/4 tspn melted butter or 1/2 cup nonfat evaporated milk, for 1/2 cp needed.
4. Bread Crumbs- this wear the left overs can come in handy in your pantry! Try crushed crackers, potato chips or even cornflakes! Want some tang? Try crushed pretzels!
5. Corn Starch-substitute 2 tablespoons all purpose flour or tapioca for 1 tbsp of corn starch needed.
6. Sour Cream- Substitute Low-fat Plain Yogurt. In small amounts, it offers the same delicious tang and creaminess that sour cream does. But be wary when baking with this substitute, as yogurt does not hold up the same as sour cream.
7. Ketchup- I know you have kids, like that is gonna happen? Right, but for those without kids, it can! I know- the horror! LOL. But you can make your own pretty quickly, and use the amount you need. This is also great to show kids WHAT is in ketchup! Mix 1 cup tomato sauce, 1/2 cup sugar, 2 tablespoons white vinegar and waala- ketchup! You can even spice it up with some Tony's if you want a Cajun twist!
8. Molasses- this is one most people do NOT keep on hand. Save the budget and substitute instead for 1 cp needed:
a. 1 cp honey
b. 1 cp dark corn syrup
c. 1 cp maple syrup
d. 3/4 cp light or dark brown sugar dissolved in 1/4 cp liquid and heated. I've used this one before and actually melted it in butter and got a great flavor in the recipe!
9.Sesame Oil- Substitute 1/2 tspn canola oil and 1 1/2 tspn sesame seeds for sesame oil.
10. Cream/ Cream Fraiche- 3 simple substitutions for 1 cp needed:
a. 1 cp sour cream
b. 1 cp whipping cream plus 1 tablespoon buttermilk or yogurt
c. 1/2 cp whipping cream plus 1/2 cp sour cream
11. Hot Sauce- Substitute 1/2-3/4 tspn cayenne pepper, plus vinegar, for the amount you need. This also allows you to control the heat!
12. Ricotta- Substitute Cottage Cheese 1 for 1. Many people actually prefer the taste of it over Ricotta in recipes, including kids. It has less tang, and is more palpable. We actually mix it with shredded Monterrey jack and use in our lasagna- you get a great melt and a good accompaniment to the red sauce.
13. Kosher Salt- this one is easy- just pull out the Sea Salt. Easy Peasy!
14. Castor Sugar- you may see this in European recipes, but don't panic, it's easy to substitute- process 1 cp granulated white sugar in food processor until very fine. See Simple!
15. Tapioca- this is one that may be in Mom's pantry but not your's! You can substitute 1 1/2 tbsp flour for 1 tbsp tapioca needed. Now if you are making Tapioca pudding, this will NOT taste the same!
16. Vinegar- you can substitute lemon juice 1 for 1.
17. Beer- yes you can actually substitute chicken broth for beer in recipes, 1 for 1! Obviously you won't get the same taste for beer bread, but for recipes where it is part of the liquid, it should be fine!
18. Vanilla Bean- you can use 2-3 tsp vanilla extract per bean needed.
19. Self Rising Flour- oh oh, hubby brought the wrong flour and you just realized it at 10 pm? No problem! Just take 7/8 cp all-purpose flour and 1 1/2 tspn baking powder and 1/2 tspn of salt for every 1 cp needed! If you need CAKE flour instead- just use all- purpose flour minus 2 tbsp, per cp needed.WHEW!
20. Beef Broth- you can actually substitute 1/tbsp soy sauce with enough water to make 1 cp, for 1 cp of beef broth. Who knew?
