Another of the different, unique but EASY recipes is the aforementioned spaghetti cupcakes!
Spaghetti Cupcakes
Ingredients:
Makes 12
- 1 can (14.5 oz) Spaghetti'Os
- 4 eggs
- 2 cups mozzarella cheese, grated
- Spray oil
Directions:
1. Preheat oven to 350°C.
2. In a bowl beat eggs, then add 1 ½ cups cheese and the spaghetti and stir to combine.
3. Grease muffin tins and evenly distribute the mixture across 12 muffin cups, about 1/4 cp mix each..
4. Top each with remaining cheese and bake for 15 minutes, until the eggs are set and the cheese is lightly browned.
Optional: Have your kids decorate the tops of their “cupcakes” with sliced olives, red peppers, mushrooms, ham or pepperoni (whatever you have on hand, and that they want added)
These will keep in your freezer for up to 2 weeks.Just wrap securely in plastic wrap. When you want to cook them, remove from freezer to that in fridge overnight, for a lunchbox treat the next day!
