When we realized Miss Grace was going to need an almost Paleo diet with her remineralizing diet, I searched the internet and found Elana's Pantry. I swear there were angels singing when I did!

Elana's recipes are gluten-free, grain-free and dairy free.
Yet, one look at the pictures on her blog, and you'll be wanting to run and make every dish, 
as they all look scrumptious!

So I was thrilled to be able to review her cookbook!

Review:

For someone who is new the whole concept of Paleo, this is a good intro cookbook! Elana starts with the basics- what the diet is and needed pantry foods.She then covers breakfast, breads/crackers, vegetables, entrees, condiments/spreads/toppings, pies/pastries/crusts, ice cream, cookies/bars, and beverages. Which pretty much covers everything When I first went thru the book, I think I bookmarked over half the recipes! So many of the recipes are close to our family recipes, but with minor changes to make them Paleo. So the book is basically a conversion guide for me!


One of the basic recipes that I tried at first was the maynonnaise. I know, I know, so simple! But when you want to change from processed foods, it is one of the simple changes to make that really makes a difference!  Check out the recipe:

Paleo Mayonnaise

Ingredients:
1 large egg
1 tbsp apple cider vinegar
1/2 tsp sea salt
1 cp olive oil

Directions:
1. In a high powered blender, blend egg, vinegar, and salt til smooth, about 10 seconds.
2. Place the olive oil in a liquid measuring cup with a spout. With the blender running, slowly pour in the olive oil in a fine stream. Continue blending until mixture thickens to the consistency of regular mayonnaise.
3. Use right away, or store in glass jar, in the fridge for up to 3 days.
(In my pix above, I added a touch of parsley and fresh dill, as we like that in out mayonnaise)- Miss Grace gives it a big thumbs up!

There are SO many recipes in this book that we'll be making! Most of the ingredients, like almond flour, arrowroot powder, coconut flour and coconut sugar) should be readily available if you have stores that carry organic/natural products, or at your local health food store!Most of the recipes in fact only have 4-5 ingredients- making them SIMPLE and quick to make- a HUGE plus!
