It's a North vs South Moment- PLEASE VOTE FOR ME- And You Might WIN $250!

NOPE- just a long standing competition between the North and South Shores of NOLA! South Shore is NOLA and Jefferson Parish, where as North Shote now encompasses St Tammany, Washington and Tangipahoa Parishes- what used to be the 'bedroom communities' for the South Shore! The two re divided by Lake Ponchartrain!

Luxury Pasta (a Louisiana company!) invited Myndee Corkern from Random Myn (and New Orleans Moms Blog), and I to do compete in their November round of recipe face-offs for Fall Comfort Food!

I decided to work outside of the macaroni and cheese comfort zone and go for something with a little zip, that is unexpected, but leaves you BEGGING for more! Seconds? Nope, good luck keeping the family from having Thirds- meet Hurricane Fiesta Chicken!

So without further ado- let's get onto the recipe!

Fall means comfort food, but with our busy schedules, you want to pull items from your pantry, put together a quick dinner and move on to fun things like the kid’s homework! But how about a dish you can make on the weekend, have a great super, and then freeze a second dish for those nights where a quick, warm and ooey cheesy casserole just hits the spot, and leaves everybody at the table smiling and happy? Meet Hurricane Fiesta Chicken- made from items typically in your pantry, it’s perfect for your family, potlucks, and taking to others this holiday season!

INGREDIENTS:


1 deli rotisserie chicken, chicken removed, or about 3 ½ cups chopped chicken
¼ cp diced white onion
1 10 oz  can Cream of Mushroom soup
1 10 oz can Enchilada Sauce
1  6 oz can Rotel Tomatoes (pick heat level your family prefers)
12 oz Queso Blanco Velvetta,cheese
2 cups shredded Colby-Jack, Monterey Jack, or Mexican Blend cheese
Parsley

DIRECTIONS:

1. If using a fresh deli chicken, remove all meat from bone and dice into small bite size pieces, set aside.
2. Heat oven to 350 degrees. Spray 9-13 casserole or cake pan, or coat with olive oil. Set Aside.
3. But large pot of water on to boil. When it comes to a boil, add the egg noodles, add a touch of oil, stir. Cook til done, about 9 minutes, drain.  (while boiling- move on to next step).
4. In large mixing bowl, add Cream of Mushroom Soup, enchilada sauce and Rotel tomatoes, stir together to mix.
5. Dice onions, if not already diced, and add to soup mix. Add chicken as well, stir well.
6. Chop Velevetta cheese in small chunks, and add to soup mix. Add 1 cp of shredded cheese mix to mix. Stir well.
7. When noodles are done, add to soup mix and stir well, so that all are incorporated.
8. Pour mix into prepared casserole pan. Sprinkle top with parsley, then with the 1 cup of shredded cheese.
9. Put casserole in oven and cook 30-40 minutes, until top is golden and bubbly.

Serve with warmed bread and a salad. Pick up a loaf from the deli, and bagged salad, and your dinner can be ready in less than an hour!

NOTE: To eat one and make one- double your ingredients, follow instructions above, but put into 2 casserole/cake pans. Cook one, and the wrap second in foil. Second casserole can be frozen, and removed when needed- just remove it from the freezer on the night you need it, and cook for 60 minutes!.
