Well,  School is back in session for most of us....

I know, boo hoo an all....

If you're already fighting the after-school blahs, here are a couple of great EASY and Quick snack ideas,
from our friends over at eMeals


Peanut Butter Balls


No Bake Peanut Butter Truffles
Prep: 20 minutes, Serves: 6

Ingredients

- ¾ cup quick cooking rolled oats
- ¾ cup nonfat dry milk powder
- ½ cup creamy natural peanut butter
- ½ cup honey
- ½ teaspoon cinnamon (optional)

Instructions

1. Place all ingredients in a medium bowl, and stir to combine.
2. Scoop one tablespoon of peanut butter mixture at a time, and roll with hands into a ball.
3. Place balls in an airtight container lined with parchment paper, and refrigerate until chilled.

SEE, how EASY was that? 
And they are SOOOO good!
Plus you can add extras like mini chocolate chips or cranberries to them!


Gluten Free Rice Cake Stacks
Prep: 5 minutes, Serves: 2

Ingredients

- 4 mini kettle corn rice cakes
- 2 tablespoons spreadable strawberry cream cheese spread
- 4 banana slices
- 4 blueberries
 OR
- 4 mini chocolate rice cakes
- 2 tablespoons natural peanut butter
- 4 banana slices
- 4 Reese’s pieces candies

Instructions

1. Spread ½ tablespoon cream cheese or peanut butter on each rice cake.
2.  Top with banana slices and blueberries or Reese’s pieces candies.

Even EASIER, right?
