The Healthy Munchy Freeze-Drying Method, scientifically known as lyophilization, is a gentle process that safely removes the water from the fruit. The first stage involves freezing the freshly cut fruit using very low temperatures, turning the water inside the fruit into frozen crystals. The second stage involves a drying process using a vacuum chamber at a low temperature.This allows the frozen crystals to transform the solid state into a gas, totally bypassing the liquid state.
