Recipe Weekend: What Does a Dairy Farm and Your Superbowl Party Have in Common?


Today we had a fun Field Trip with our Home School group to the Country Girls Creamery in Lumberton, MS!

It was very strange, as it was a nice 50 degree day, when not even 12 hours before it had been in the 30s, and 24 hours before in the teens! Mother nature at work!

With over 300 head of Guernsey cows, the Creamery is a full operating dairy farm, that sells their own milk, cheese and meat (beef, pork and chicken- ALL grass fed!).

How can you not love that face?
This little calf fell in love with Miss Grace and kept trying to lick her! It was actually quite cute and funny! All the kids got to feed a calf from the bottle, and it was a true tug of war to get the bottles back when they were empty!

The kids had a lot of fun watching the 4 cows get milks via machine all at the same time, and discovering why Guernseys are actually better cost wise, for mik making than Holsteins. They were pretty impressed with how the small dairy ran and asked some pretty astute questions, to parental pride all around!

It was good for the kids to see a product from start to finish, to see how one animal can produce not only milk, but meat, and to visit a true working farm. And of course after some fresh milk and cookies, we all had to go home with a gallon (or two) of their wonderful tastign milk! Which by the way, is low on the lactose scale and didn't both Miss Grace at ALL!. SCORE!

Yup, Pizza!

We eat more Mozarella cheese than Cheddar! So no surprise, the US is number 1 in cheese making! 

So how about a great 'pizza' recipe for the weekend, in honor of ALL that cheese, that is good for your upcoming Superbowl party too?

Buffalo Chicken Pizza Bites

Yup- it's mini pizza bites! Trust me, your family, and guests, will LOVE them!

Buffalo Chicken Pizza Bites

Makes 24

Ingredients:

cps cubed cooked chicken breast
4 tbsp melted butter
4 oz Louisiana hot sauce
1 bottle blue cheese dressing 
2 cans refrigerated thin pizza crust
8 oz shredded mozzarella cheese 

Directions:

1. Heat oven to 375°F. Spray 2 regular-size (12) muffin cup trays with cooking spray.
2. In a medium bowl, combine the melted butter and hot sauce, then add cubed chicken, stirring to caot evenly Set aside.
3. Unroll 1 can of dough at a time, into a large rectangle. Cut dough into 12 equal squares. Place 1 dough square in each muffin cup, making sure to press dough all the way down in the bottom and up sides of each of the cups. 
4. Sprinkle a little of the mozarella in the bottom of each cup, followed by a some of the blue cheese dressing (how much depends on your taste, but we use 1 bottle for 24 cups, you might want more), then some of the chicken mixture (about 1 tablespoon per cup), then top with more mozarella.
5. Bake about 15 minutes, or until crusts are golden brown and filling is hot. 
6. Serve immediately and bask in accolades!

Note:
You can also use the same mixture on a prepared pizza crust, just bake crust at 425 degrees, for about 6-10 minutes, then top with ingredients, just like you did with the cups, and back for an additional 5-10 minutes, until cheese is bubbly.
