Yup, it is! Which sorta makes sense, it's also Mother's Day in a few weeks, and you know there's no 'moms' without eggs...LOL

But this Spring it's also the perfect time to refresh your egg thinking, with an “egg-ucation”!

Eggs have hearty doses of “good” fats. In fact, about two-thirds of the fats in eggs are the unsaturated types that experts recommend to eat to keep our hearts healthy.  There is 70 mg of heart-healthy omega-3 fatty acids in a single large egg. There is a little saturated fat too—the type that’s linked to higher blood cholesterol levels, but eggs also contain nutrients that help lower heart disease risk, such as B vitamins, vitamin D, and folate.

Even their plastic containers are better for the environment! While plastic is often associated with negative environmental impacts, Nellie's chose theirs because their cartons are actually better for the environment than traditional molded fiber cartons made of pulp, which result in more than double the carbon footprint of Nellie's cartons over their lifecycle! 

Their cartons are made from 100% post-consumer recycled plastic, so they can be accepted in most recycling programs.  When their plastic carton is recycled again, it’s less harmful to the environment than recycling pulp packaging–consuming far less energy, and water, with no waste or added chemicals. But the big thing is HOW they taste!



As for taste, I have to tell you, you CAN taste the difference with Nellie's free-range eggs! Everybody who ate the egg bake, below, at work was very impressed with the yummy taste, and how better the eggs were than the ones they normally buy(aka the cheap ones).  It's hard to describe, but they just tastes fresher, and less processed!

Now how about that recipe?

Mexican Breakfast Egg Bake

Ingredients:
(for large 9x13 pan)

18 Nellie's large eggs
12 oz frozen shredded hashbrowns
6-8 slices bacon
1/2 lb Chorizo or spicy ground sausage
1/2 cup trinity- onions, bellpepper, garlic combination, finely chopped
1 can Rotel tomatoes- your choice of mild or spicy
12-20 oz. Mexican shredded cheese-amountdepending on your choice

1. Preheat oven to 350 degrees, and spray/oil you 9x13 baking pan, if you are baking right away.

2. Fry up your sausage and trinity ingredients, sprinkled with Mexican seasoning. Set aside in large mixing bowl.

3. In same frying pan, fry up about 6-8 slices of bacon. Leave grease in pan and remove bacon to cool. then crumble or break into pieces, and add to sausage mix. Note: in my pix, you can see some THICK bacon there! LOL. I used some bacon ends that we had gotten from our Creamery visit, but they are not easily found, unless you have a butcher nearby. For me they really added more flavor to the dish, but if you use thick bacon, you can get similar flavor.

4. While cooking bacon, drain Rotel tomatoes in collander. Then add tomatoes to your sausage mix in your large bowl.

5. In frying pan, add has browns and pre-ccok. I cooked them so they soaked in all the flavors, but had not gotten crunchy. If you prefer them that way, you can finish cooking them that way.

6. Add has brown to large mixing bowl, add a touch more of your Mexican spice and stir all together. Add in about half a bag of your shredded cheese.

7. In small bowl, place all your 18 eggs, salt, pepper and more Mexican seasoning. Whisk well, making sure to break up all your yolks (Nellie's are really large!).

8. Pour about 3/4 of your large mix into your baking pan, and then cover with 3/4 of your egg mix. Stir together and spread across pan. Place 1/2 of remaining shredded cheese across mix.

9.  In small mixing bowl, add the rest of your meat mixture, and mix well. Spread across the cheese top mix in your baking pan. Cover pan with foil.

At this point you can place in the fridge for overnight, and then cook in the morning to have for breakfast! Just follow preheat and pan instructions on Step one.

10. Cook at 350 degrees for 20 minutes, pull out pan, remove foil, and spread remaining cheese across the top of the mix. Put back in pan for another 40 minutes, or until toothpick in middle comes out clean. My mix was pretty thick, so it went another 10 minutes.

Look how YUMMY your breakfast bake looks!

To serve, cut into squares, garnish with avocado slices, sour cream and salsa, if desired.  Serve with warmed tortillas on the side as well, as shown on top picture.

OR, you can crumble up corn chips, and place a piece of the bake on top of them, and then garnish, for a more migas version.
