Did you know that May is National Egg Month?

Yup, it is! Which sorta makes sense, it's also Mother's Day in a few weeks, and you know there's no 'moms' without eggs...LOL

But this Spring it's also the perfect time to refresh your egg thinking, with an “egg-ucation”!

When choosing your eggs, it’s important to pick eggs that’s good for you, your family, and also good for the hens. An egg doing it the right way? Nellie’s Free Range Eggs(and their sister brand Pete and Gerry’s Organic Eggs) are doing JUST that! As Certified Humane, Free Range eggs, their hens are free to roam outside, peck at the ground, dustbathe and act like real hens, like you would have at YOUR house!

Let's see if you can pass an #eggsarehealthy quiz about how eggs are “Nature’s perfect food:”

1. Do you know how much protein is in ONE egg?

One large egg delivers a full 6 grams of ultra-high-quality, satisfying protein. Protein si very important for building and repairing muscles, producing hormones, and strengthening hair and nails!

2. Are eggs good for your eyes?

Eggs contain eye-opening amounts of lutein and zeaxanthin.Don't know what they are? These antioxidant egg nutrients, found in yolks, are linked with lower risk of age-related Macular Degeneration. (as we've shared before, AMD is the leading cause of blindness in people over 50.)

3. Eggs can help your kids get smarter, true or false?

Eggs are one of nature’s best ways to get choline, a  key nutrient, needed for healthy cell membranes and nerve functioning, as well as memory and brain development (especially important for moms-to-be, to support a baby’s growing brain). Your kid's brains are still growing, eggs are their best friend!

4. Which type of fats are in eggs?

Eggs have hearty doses of “good” fats. In fact, about two-thirds of the fats in eggs are the unsaturated types that experts recommend to eat to keep our hearts healthy.  There is 70 mg of heart-healthy omega-3 fatty acids in a single large egg. There is a little saturated fat too—the type that’s linked to higher blood cholesterol levels, but eggs also contain nutrients that help lower heart disease risk, such as B vitamins, vitamin D, and folate.

That's a win-win combination of protein and healthy fats! That's why they're egg-stra satisfying! And why you’re not raving because of hunger pangs hours before lunch, when you've had an egg for breakfast!

So how'd you do?

Now let me tell you just how much BETTER Nellie's eggs are for you!

Nellie's free range eggs are packed with 13 essential vitamins and minerals, high-quality
protein“good” fats >and antioxidants, and all for a mere 72 calories apiece.

nellies versus regular eggs

WHY so much better? Nellie’s eggs are certified humane, free range eggs. All of their hens live in a Certified Humane® environment. As the first Certified Humane® egg producer, Nellie's insists that their farmers follow the strictest standards of humane animal treatment, safety, and environmental sustainability. And in return, those well-fed, happy hens lay eggs of various sizes, but mainly Large, Extra-Large and Jumbo, as you can see above!  Nellie's eggs contain no hormones or antibiotics, and are Kosher certified.

Even their plastic containers are better for the environment! While plastic is often associated with negative environmental impacts, Nellie's chose theirs because their cartons are actually better for the environment than traditional molded fiber cartons made of pulp, which result in more than double the carbon footprint of Nellie's cartons over their lifecycle!

Their cartons are made from 100% post-consumer recycled plastic, so they can be accepted in most recycling programs.  When their plastic carton is recycled again, it’s less harmful to the environment than recycling pulp packaging–consuming far less energy, and water, with no waste or added chemicals. Even their paper insert is recyclable!

And they're special plastic insert that covers the eggs means no broken eggs when you get home from the store either! You have to love that!

But the big thing is HOW they taste!

As for taste, I have to tell you, you CAN taste the difference with Nellie's free-range eggs! Everybody who ate the egg bake, below, at work was very impressed with the yummy taste, and how better the eggs were than the ones they normally buy(aka the cheap ones).  It's hard to describe, but they just tastes fresher, and less processed!

Now how about that recipe?

Mexican Breakfast Egg Bake

Mexican Breakfast Egg Bake

Ingredients:
(for large 9x13 pan)

18 Nellie's large eggs
12 oz frozen shredded hashbrowns
6-8 slices bacon
1/2 lb Chorizo or spicy ground sausage
1/2 cup trinity- onions, bellpepper, garlic combination, finely chopped
1 can Rotel tomatoes- your choice of mild or spicy
12-20 oz. Mexican shredded cheese-amountdepending on your choice
Mexican seasoning

1. Preheat oven to 350 degrees, and spray/oil you 9x13 baking pan, if you are baking right away.

2. Fry up your sausage and trinity ingredients, sprinkled with Mexican seasoning. Set aside in large mixing bowl.

3. In same frying pan, fry up about 6-8 slices of bacon. Leave grease in pan and remove bacon to cool. then crumble or break into pieces, and add to sausage mix. Note: in my pix, you can see some THICK bacon there! LOL. I used some bacon ends that we had gotten from our Creamery visit, but they are not easily found, unless you have a butcher nearby. For me they really added more flavor to the dish, but if you use thick bacon, you can get similar flavor.

4. While cooking bacon, drain Rotel tomatoes in collander. Then add tomatoes to your sausage mix in your large bowl.

5. In frying pan, add has browns and pre-ccok. I cooked them so they soaked in all the flavors, but had not gotten crunchy. If you prefer them that way, you can finish cooking them that way.

6. Add has brown to large mixing bowl, add a touch more of your Mexican spice and stir all together. Add in about half a bag of your shredded cheese.

7. In small bowl, place all your 18 eggs, salt, pepper and more Mexican seasoning. Whisk well, making sure to break up all your yolks (Nellie's are really large!).

8. Pour about 3/4 of your large mix into your baking pan, and then cover with 3/4 of your egg mix. Stir together and spread across pan. Place 1/2 of remaining shredded cheese across mix.

9.  In small mixing bowl, add the rest of your meat mixture, and mix well. Spread across the cheese top mix in your baking pan. Cover pan with foil.

At this point you can place in the fridge for overnight, and then cook in the morning to have for breakfast! Just follow preheat and pan instructions on Step one.

10. Cook at 350 degrees for 20 minutes, pull out pan, remove foil, and spread remaining cheese across the top of the mix. Put back in pan for another 40 minutes, or until toothpick in middle comes out clean. My mix was pretty thick, so it went another 10 minutes.

Look how YUMMY your breakfast bake looks!

To serve, cut into squares, garnish with avocado slices, sour cream and salsa, if desired.  Serve with warmed tortillas on the side as well, as shown on top picture.

OR, you can crumble up corn chips, and place a piece of the bake on top of them, and then garnish, for a more migas version.

So I hope you make this egg bake for YOUR Cinco de Mayo celebrations, and that you check out just how much better Nellie's free range eggs can make all of YOUR recipes, and how much better they are for your family!
