livfit chocolate cake

LIVFit Healthy Chocolate Cake

Ingredients- Cake
2 cps  granulated white sugar
1 3/4 cps  all-purpose flour
3/4 cp unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 tbsp Liv Fit Super Foods Powder
2 large eggs
1 cp warm water 
(for deeper flavor, use warm coffee instead)
1 cp milk
1/2 cp vegetable oil
1 1/2 tsp pure vanilla extract

Ingredients- Chocolate Frosting:

6 ozs semi sweet chocolate pieces (or coarsely chopped from bar)
1 cp unsalted butter, room temperature
2 cps confectioners (powdered or icing) sugar, sifted
1 1/2 tsp pure vanilla extract

Directions:

1.  Preheat oven to 350 degrees, spray 9 x 13 pan with a non stick vegetable spray
2. In a large bowl,  whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt. Then add in the Liv Fit Super Foods (preferably when no one is looking! LOL)
3. In second bowl, whisk together the eggs, water (coffee), milk, oil, and vanilla extract. 
4. Add your wet ingredients to the dry ingredients in the first bowl, and whisk, until combined. 
5. Pour batter into your prepared pan and bake for about 27 - 32 minutes,or until a toothpick inserted into the center of the cake comes out clean. 
6. While cake is cooking, make frosting:
Melt the chocolate in a heatproof bowl in microwave, stirring after every 15 seconds, until melted, then set aside, to cool to room temperature. meanwhile, in electric mixer, beat the butter until creamy, about 1 minute. Then add the sugar, and beat until light and fluffy, about 2 minutes. Add in the vanilla extract, and then the melted chocolate, then beat on low speed until mixed together. Increase the speed to medium-high and beat about another 2-3 minutes, until glossy.
7. Let cake cool for about 20 minutes, before frosting.
