So this week has been uber chaotic, with parental illnesses (and late night ER visits), a crazy school schedule, and work. SO I've been on limited review power (literally getting 6 hours of sleep has been a blessing some nights! And I am tooooo old to survive on 2 hours of sleep and work 12 hours!)
So instead of offering a cookbook or craft book review today for recipe weekend,
I've going to just share a recipe and GIVEAWAY a great little seafood recipe cookbook that I picked up over on the coast! Isn't it fun to troll through thrift stores to find the treasures they can hold?

Today's recipe can be made exactly per recipe, or if your familly likes Ricotta cheese, you can use it instead of the cottage cheese. like more layers, add more, but you may need to double up on fillings! It also does well with shrimp added! You might just find it your go to casserole recipe for take a longs!
