    Review:

    There are some really great recipes in this book, for ANYONE to love! But if you are on a special diet, be it vegan, gluten-free, or diabetic, you will definitely love the great tasting recipes like Chicken Noodle Soup, Mexican Zucchini Casserole, Shredded Buffalo Chicken, Herbed Whole Turkey Breast, Turkey Meatballs, Corned Beef, and Mary’s Meatloaf! We've already got all those marked to make this next month! We've always preferred to cook corned beef in a pressure cooker, as it comes out super moist, and after trying to version in this book, it might just become a regular staple in your household! My only complaint with the book is the lack of pictures. This is a good starter cookbook for those who have to change their diets and are trying to adjust family recipes as well. We highly recommend it!

    Recipe:

    This recipe is super to use with leftover meat. You could make it with the pork, as the recipe says, OR you could change it up and add shredded chicken, making it a go-to coup, perfect for busy (and cold) days! Plus it is super easy to double up the recipe.


    4-Ingredient Carnitas Posole (Instant Pot)

    Makes 4 servings

    Ingredients:
    2 cups Chicken Bone Broth, or low-sodium store-bought chicken broth
     1 (15-ounce) can hominy 
    2 cups pork carnitas or shredded cooked pork 
    2 cups Roasted Tomatillo Salsa (make your own, or you can use a 16 oz jar of your preferred salsa)
    chopped avocado, for garnish (optional) 
    chopped cilantro, for garnish (optional) 

    Directions:
     1. In the electric pressure cooker, combine the broth, hominy and its juices, pork, and salsa. Stir to combine. 
    2. Close and lock the lid of the pressure cooker. Set the valve to sealing. 
    3. Cook on high pressure for 8 minutes.
    4. When the cooking is complete, hit Cancel and quick release the pressure. 
    5. Once the pin drops, unlock and remove the lid.
     6. Spoon into bowls and serve with avocado and/or cilantro (if using).
