This is a fun book- the author makes no excuses for days when she may want to avoid what shes supposed to be doing, to bake, or wants to bake, but doesn't feel like baking ALL day, so goes for quick and easy recipes! We've all been there, maybe a bit more so lately? LOL. half the fun in the book is reading the intro to all the recipes, about why the recipe is good for procrastibaking and how it came to be! The recipes are easy and for the most part can all be made from your pantry (score, perfect for baking right now!), and when they aren't, she gives you substitutes you probably DO have at home. I love cookbooks that THINK about home bakers, don't you?

Erin Gardner is a baking and cake design instructor, the creator of ErinBakes.com, and author of Erin Bakes Cake.
