Review:
More than just a fun cookbook, this book teaches baking as well! the first chapter takes kids through getting the right baking equipment, to the right ingredients, and the included hints and helps really offer great baking insight! Then the next chapters teach the different types of cupcakes, from filled to basic to holiday themed.  Along the way your kids will learn how to take basic pantry items and turn them into fun toppers and treats for their cupcakes! With unique combinations (chocolate chip raspberry!) to season favs (cinnamon spice with apple filling!) to fun themed (m&m finned mermaid cupcakes), your kids will find some new favorite cupcakes in this collection.

My only peeve with the book (ad it is a big one) is that there aren't photos with every recipe. This is a KIDS cookbook, so it SHOULD have pictures, so kids can see what they cupcakes SHOULD look like, without having to see if its on the cover picture, and if not, then have to guess. But put this with a fun selection if cupcake wrappers and toppings, and your kids will be baking all Summer long!

Recipe:
While these are supposed to be St Patrick's Day cupcakes, the cupcake and frosting recipes are spot on for use ALL year long- just change the color of your frosting, or add some to the batter. They are super moist and way beyond using a boxed cake mix!

COLOR ME GREEN CUPCAKES\
Ingredients:
For the cupcakes
-Non stick cooking spray (if desired)
- 8 tablespoons unsalted butter (1 stick) at room temp,
plus more for preparing pan
-1 cup sugar
-1 and 1/2 cups all-purpose flour
-1 1/2 teaspoon baking powder
-1/2 teaspoon fine salt
-1/2 cup full fat plain yogurt
-2 teaspoons pure vanilla extract
-3 large eggs
-2-4 drops green (other other color) food coloring

For the Vanilla Buttercream frosting
-12 tablespoons (1 1/2 sticks) unsalted butter, room temp
- 3 cups confectioners' sugar
-1/8 teaspoon salt
-2 tablespoons pure vanilla extract
- 2 tablespoons milk
- food coloring, optional

Directions:
1. Preheat the oven to 350ºF. Line a muffin pan with cupcake liners, or grease the inside of each up with the extra butter, or cooking spray.

2. Mix all the dry ingredients: In a stand mixer, fitted with paddle attachment or use an electric mixer with a large mixing bowl. Combine sugar, flour, baking powder, and salt.. Mix on low speed for 30 seconds.

3. Mix in the wet ingredients: add in the butter, vanilla and yogurt. Mix on medium speed for 30 seconds. Stop the mixer and use a spatula to scrape down the sides of the bowl.

4. If not confident with egg cracking, crack egg  into a small bowl to make sure no shell goes into the batter, and mix on medium speed for 30 seconds, after adding each. 
Then separate the remaining eggs, whites in one bowl, yolks in another and add ONLY yolks to batter, mixing for 30 seconds, until batter is silky smooth. Use leftover whites for another recipe. Scrape down sides of bowl, and use spatula to mix batter a few more times.

5.  Add 2 drops of your food coloring to the batter and stir with spatula to incorporate. If you want it darker add 2 more drops.

6. Using an ice cream scoop, fill the cups of the mussing pan, making sure each is only three quarters of way full.

7. Bake for 18-20 minutes, rotating the pan 180 degrees, halfway through cooking, for even cooking. Cupcakes are done when they spring back when touched on top.

8. Let cupcakes cool . Place cupcake pan on a wire rack and let cool for 10 minutes.Remove cupcakes immediately from pans, and cool on a wire rack. Then remove from the pan and place back on the wire rack to cool for one hour. And go make the frosting, then decorate away!

Frosting Directions:
1. Cream butter: In a stand mixer, fitted with paddle attachment or use an electric mixer with a large mixing bowl, combine butter, sugar, and salt.. Mix on low speed for 30 seconds, until sugar is incorporated.  Stop the mixed and use a spatula to scrape down the sides of the bowl. 
2.  Add wet ingredients: add in the vanilla and mix on medium speed for about 3 minutes, until creamy, stopping about halfway through to stop the mixer and use a spatula to scrape down the sides of the bowl. Add the milk and mix for about 1 more minute, until fluffy.
Note: you can add in different flavored extracts for peppermint, lemon, orange, buttercreams too!
3. To Color: Add 2 drops of your food coloring to the frosting, and stir with spatula to incorporate. If you want it darker add 2 more drops at a time (coloring can get intense fast!).
