Recipe Weekend: SUPER Duper EASY Pumpkin Chocolate Chip Muffins

 I know what you're gonna say- PUMPKIN?

But TRUST ME, unless your family sits and smells these amazing muffins, 

all they're gonna think is YUM when they taste them

(so don't let them see the ingredients or you cooking them! LOL)!


These are PERFECT for Thanksgiving morning, and all weekend long,

especially if you let the kids make the second (and possibly third batches!)

Those look YUMMY don't they?

Ingredients:
1 16oz can pumpkin
1 cake mix (your choice, white, yellow, spice, chocolate)
1 bag of chocolate chips

Yes, that is ALL. 

Note: you CAN add some pumpkin pie spice IF you want to. For the ones above we added some British allspice, but just the barest of hints, with a yellow cake mix. Obviously, none would be needed for spice cake mix.

Directions:
1. In one bowl, mix all 3 ingredients- you may like them with half a bag of chips, or the whole bag-no worries, add as much or little as you like!
2. Grease muffin tin if metal or class, then scoop in the dough. We found that half of the normal amount is better. When they get too big (like above), they can get really heavy. So you can get 12-24 out of one batch!
3. Bake at 350 degrees for about 20-23 minutes. You may need longer if you made them bigger (25-30), or if your oven is different.

That's it!

If you use the chocolate cake mix, it tens to fool the eye more and give it a richer flavor- I added just a touch of espresso, to make it pop more. And that's the beauty of this recipe, it's easy to tweak to your family's preference!
